A leading ice cream manufacturing company in Dubai is looking for a Food Laboratory Technician to join its quality assurance and food safety team. This role is ideal for candidates with experience in food microbiology, dairy testing, laboratory analysis, and quality control within the food manufacturing industry.The Food Laboratory Technician will play a critical role in ensuring that all ice cream products meet microbiological, chemical, sensory, and regulatory standards while maintaining high levels of hygiene, safety, and product consistency.

Job Responsibilities- Food Laboratory Technician

Laboratory Testing and Analysis

  • Conduct routine microbiological, chemical, and sensory testing on raw materials, in-process products, finished ice cream products, water samples, and environmental swabs.
  • Perform laboratory analyses in accordance with standard operating procedures (SOPs), HACCP guidelines, GMP standards, and food safety regulations.
  • Carry out microbiological testing such as total plate count, yeast and mold analysis, coliform testing, and pathogen monitoring.
  • Perform chemical analysis including pH testing, moisture analysis, acidity testing, fat content checks, and other quality verification procedures.
  • Conduct sensory evaluations to assess the taste, texture, aroma, appearance, and overall product quality of ice cream products.

Sample Collection and Documentation

  • Oversee product sampling activities by requesting, receiving, verifying, labeling, and coding samples according to laboratory procedures.
  • Ensure sample integrity and traceability throughout the testing process.
  • Maintain accurate laboratory records, test reports, calibration logs, and analysis documentation.
  • Record and interpret test results with full traceability and proper documentation practices.
  • Compile laboratory reports and submit periodic testing summaries and quality trends to the Quality Control Manager.

Quality Control and Food Safety Compliance

  • Immediately report any nonconforming or out-of-specification results to the Quality Control Manager.
  • Support corrective and preventive actions (CAPA) according to the company’s nonconformance procedures.
  • Assist in maintaining compliance with food safety management systems such as HACCP, ISO 22000, GMP, and hygiene standards.
  • Participate in internal audits, laboratory method verification, validation activities, and proficiency testing programs.
  • Support product shelf-life studies by conducting scheduled testing on retained samples and documenting results.

Laboratory Equipment and Inventory Management

  • Monitor laboratory consumables, chemicals, reagents, media, standards, and testing materials to ensure sufficient stock levels.
  • Raise purchase requests for laboratory supplies whenever necessary.
  • Coordinate with maintenance and engineering teams for equipment calibration, servicing, and preventive maintenance.
  • Maintain updated calibration records for laboratory instruments and testing equipment.
  • Operate and maintain laboratory equipment including:
    • pH meters
    • balances
    • incubators
    • ovens
    • spectrophotometers
    • autoclaves
    • refrigerators and freezers

Hygiene, Safety, and Waste Disposal

  • Ensure safe handling and disposal of laboratory waste, tested samples, chemicals, and microbiological materials.
  • Maintain excellent housekeeping, sanitation, and safety practices within the laboratory environment.
  • Follow PPE requirements, chemical handling procedures, and food safety protocols at all times.
  • Support environmental monitoring and hygiene verification activities inside the production facility.

Job Qualifications

  • Diploma or Bachelor’s Degree in Food Science, Food Technology, Microbiology, Chemistry, Dairy Technology, or a related scientific field.
  • 1–3 years of laboratory experience in the food manufacturing, dairy, ice cream, or beverage industry preferred.
  • Knowledge of microbiological and chemical testing methods used in food laboratories.
  • Familiarity with food safety standards including HACCP, GMP, ISO 22000, and laboratory best practices.
  • Experience working with laboratory documentation systems, electronic records, or basic LIMS software is an advantage.

Food Technologist – Lab

  • Excellent data recording and documentation skills.
  • Ability to manage multiple laboratory tests simultaneously.
  • Good communication and reporting abilities.
  • Knowledge of food microbiology and dairy quality standards.
  • Proficiency in MS Excel, spreadsheets, and basic computer applications.
  • Ability to work independently and as part of a quality assurance team.
  • Onsite laboratory environment within an ice cream manufacturing facility.
  • Occasional exposure to cold rooms, chillers, and freezer storage areas during sample collection.
  • Shift duty or weekend work may be required depending on production schedules and testing requirements.
  • Strict adherence to hygiene, food safety, and occupational health and safety procedures is mandatory.
