The role involves conducting routine hygiene inspections, monitoring HACCP compliance, maintaining food-safety records, delivering employee training and following up on corrective actions. Working under the direction of the Group Executive Chef, the Hygiene Officer will help ensure that food is received, stored, prepared and served in accordance with applicable food-safety requirements.
This opportunity is suitable for a practical and detail-oriented food-safety professional with experience in restaurants, hotels, catering operations or central kitchens.
Job Responsibilities
Food Safety and Hygiene Compliance
- Monitor compliance with company food-safety policies, HACCP procedures and applicable Dubai Municipality and UAE food-safety requirements.
- Conduct routine hygiene inspections across kitchens, receiving areas, storage facilities, bars, service areas, staff facilities and waste-disposal areas.
- Verify that food is received, stored, prepared, cooked, cooled, reheated, displayed and transported safely.
- Monitor temperature controls, employee personal hygiene, illness reporting and the separation of raw and ready-to-eat foods.
- Verify allergen controls and ensure allergen information is accurately communicated.
- Monitor the safe labelling, storage, dilution and use of cleaning chemicals.
- Monitor pest-control standards and coordinate corrective actions with relevant departments and service providers.
Inspections and Internal Audits
- Conduct scheduled and unannounced food-safety and hygiene inspections.
- Prepare inspection reports documenting findings, risk levels, corrective actions, responsible personnel and completion deadlines.
- Follow up with outlet managers and kitchen teams to ensure corrective actions are completed and verified.
- Support restaurants during regulatory inspections, third-party audits, certification audits and client inspections.
- Escalate serious, repeated or overdue non-conformities to senior management.
- Analyse recurring inspection findings and recommend practical preventive measures.
HACCP and Food Safety Management Systems
- Support the implementation, verification and continuous improvement of HACCP and food-safety management systems.
- Review critical control point records, temperature logs, cooling records, receiving documents and cleaning schedules.
- Assist with hazard analysis and risk assessments for new menu items, products and food-preparation methods.
- Recommend improvements to food-safety procedures, forms and inspection checklists.
- Ensure food-safety records are accurate, complete, traceable and properly maintained.
- Participate in traceability exercises and support product withdrawal or recall activities when required.
Receiving, Storage and Product Control
- Inspect food-receiving practices and verify product condition, temperature, packaging, labelling, shelf life and approved supplier status.
- Ensure rejected, expired, damaged or non-conforming products are identified, isolated, documented and appropriately returned or disposed of.
- Monitor FIFO and FEFO stock rotation, date labelling, production dates, expiry dates and batch traceability.
- Verify hygiene and temperature controls in refrigerators, freezers, dry stores and food-transport vehicles.
- Support investigations into product complaints and supplier-related non-conformities.
Cleaning and Sanitation
- Verify that cleaning and disinfection schedules are appropriate, correctly implemented and properly documented.
- Inspect food-contact surfaces, utensils, equipment, extraction systems, drains, floors, walls, ceilings and storage areas.
- Coordinate with kitchen, stewarding, maintenance and external contractors to resolve sanitation concerns.
- Identify facility and equipment defects that may create food-safety risks and ensure timely follow-up.
Food Safety Training and Employee Development
- Deliver food-safety, personal hygiene, allergen-awareness, cleaning and sanitation training.
- Conduct refresher training and toolbox talks based on inspection findings and operational requirements.
- Support food-safety induction for new employees.
- Provide immediate coaching when unsafe food-handling practices are observed.
- Maintain employee training records and monitor completion of required food-safety certifications.
- Promote a positive and accountable food-safety culture across restaurant operations.

Incident Management and Investigation
- Assist with investigations into food complaints, suspected foodborne illnesses, contamination, foreign objects and other food-safety incidents.
- Collect relevant records, samples, photographs, statements and traceability information.

Job Qualifications
- Diploma or Bachelor’s Degree in Food Science, Food Safety, Microbiology, Environmental Health, Hospitality Management or a related discipline is preferred.
- Recognised HACCP training or certification is required.
- Additional qualifications in food safety, internal auditing or allergen management are an advantage.
- 2–4 years of relevant experience in food safety, hygiene or quality assurance, preferably within restaurants, hotels, catering companies or central kitchens.
- Practical experience conducting food-safety inspections, delivering employee training and managing corrective actions.
- Experience maintaining HACCP documentation, hygiene records and food-safety checklists.
- Sound knowledge of food microbiology, contamination risks, temperature control, allergens, sanitation, pest control and traceability.
- Familiarity with applicable Dubai Municipality and UAE food-safety requirements.
- Proficiency in Microsoft Word, Excel, email and digital record-keeping systems.
- Good written and spoken English.
- Additional language skills are an advantage.
- Strong observation, communication, reporting and problem-solving skills.
