A leading bakery manufacturing and FMCG company in Dubai is looking for an experienced Senior Quality Controller to lead the Quality Inspection team and oversee the effectiveness of the Quality Control function across bakery production operations.
The role is responsible for managing Quality Inspectors across shifts, ensuring effective inspection of raw materials, in-process products, and finished goods, maintaining food safety and quality standards, and driving continuous improvement across the manufacturing facility.
Job Responsibilities
Quality Control Team Leadership
- Lead, supervise, and manage Quality Inspectors across production shifts.
- Allocate daily inspection tasks and ensure complete coverage of raw material, in-process, and finished product inspections.
- Coach and mentor Quality Inspectors on inspection techniques, sensory evaluation, documentation requirements, and food safety procedures.
- Conduct performance reviews, identify competency gaps, and implement training plans for the QC team.
- Ensure consistent implementation of SOPs and quality standards through floor supervision, coaching, and work audits.
- Manage shift handovers, attendance, workload distribution, and staffing requirements to maintain continuous Quality Control coverage.
Quality Inspection & Process Control
- Review and improve inspection procedures, sampling plans, inspection frequencies, and product acceptance criteria.
- Ensure 100% traceability requirements are followed across relevant production and quality control sections.
- Lead the development and revision of Quality Control SOPs, inspection checklists, and work instructions for bakery manufacturing processes.
- Ensure sensory, physical, chemical, and microbiological checks, where applicable, are correctly performed and documented.
- Monitor Critical Control Points (CCPs), OPRPs, process parameters, weight control, packaging integrity, product labelling, and foreign-body prevention systems.
- Authorize product release or product hold decisions based on inspection and quality results.
- Escalate critical quality and food safety issues promptly to the relevant management team.

Food Safety & Regulatory Compliance
- Ensure Quality Control activities comply with applicable UAE food safety regulations and company requirements.
- Maintain compliance with Dubai Municipality food safety requirements, Food Code and Food Watch requirements, ADAFSA requirements, applicable Cabinet Decisions, GSO standards, and company food safety procedures.
- Support implementation and maintenance of HACCP, GMP, ISO 22000, and FSSC 22000 food safety management systems.
- Support hygiene audits, sanitation verification, and personal hygiene monitoring across production areas.
- Maintain accurate documentation and ensure the facility remains audit-ready.
Audits, Non-Conformances & CAPA
- Participate in internal, customer, third-party certification, and regulatory audits.
- Lead corrective action follow-up related to Quality Inspection activities.
- Oversee investigation of non-conformances identified during inspections.
- Ensure appropriate root-cause analysis (RCA) and effective corrective and preventive action (CAPA).
- Monitor recurring quality issues and drive systemic improvements involving processes, equipment, materials, or employee training.
Documentation, Reporting & KPIs
- Ensure all Quality Inspection records are accurate, complete, and submitted on time.
- Prepare quality performance reports covering inspection coverage, non-conformance trends, team productivity, and improvement activities.
- Define, monitor, and report KPIs for the Quality Inspection team.
- Use quality data and inspection trends to identify opportunities for continuous improvement.
Job Qualifications
- Bachelor’s degree in Food Science, Food Technology, Microbiology, Chemistry, or a related discipline.
- Diploma holders with strong and relevant food manufacturing experience may also be considered.
- Minimum 5–8 years of experience in Quality Control or Quality Assurance within the food manufacturing industry.
- At least 3 years of experience in a senior, supervisory, or team-lead capacity managing Quality Inspectors or a QC team.
- Experience in bakery, pastry, food processing, or FMCG manufacturing is strongly preferred.
- Proven experience in leading, supervising, coaching, and developing Quality Inspection teams.
- Strong knowledge of HACCP, GMP, ISO 22000, and UAE food safety requirements.
- HACCP Level 3 or Level 4 certification is preferred.
- Experience with FSSC 22000, BRCGS, or similar food safety and quality management standards is an advantage.
- Strong knowledge of food quality inspection, sensory evaluation, traceability, sampling, non-conformance management, and CAPA.
- Good understanding of bakery production processes, quality parameters, packaging, labelling, and food safety controls.
- Strong leadership, analytical, communication, reporting, and problem-solving skills.
