A leading hotel and hospitality operation in Dubai is looking for a Food Safety & Hygiene Officer to support food safety, hygiene, sanitation, and HACCP compliance across hotel kitchens, restaurants, food and beverage outlets, and related operational areas.
The successful candidate will be responsible for monitoring food safety procedures, conducting hygiene inspections, maintaining HACCP documentation, and ensuring compliance with applicable Dubai Municipality food safety requirements. The role will also involve supervising and monitoring stewarding hygiene activities, coordinating with various departments, identifying non-conformities, and following up on corrective actions.
Candidates with hotel or hospitality experience, strong knowledge of food safety practices, and experience in stewarding supervision are encouraged to apply. Freshers with relevant educational qualifications and the required food safety certifications may also be considered.
Job Responsibilities
Food Safety and Hygiene Monitoring
- Monitor and maintain food safety, hygiene, and sanitation standards across hotel kitchens, restaurants, food and beverage outlets, and other hospitality operations.
- Conduct regular food safety and hygiene inspections of kitchens, restaurants, food outlets, stores, chillers, freezers, buffet areas, and food preparation sections.
- Ensure compliance with HACCP principles, established food safety procedures, and applicable Dubai Municipality food safety requirements.
- Monitor food receiving, storage, preparation, cooking, cooling, thawing, reheating, and hot and cold holding processes.
- Verify food temperature monitoring records to ensure that food is stored, prepared, cooked, and held under appropriate conditions.
- Monitor food handling practices to minimize the risk of cross-contamination and food safety hazards.
- Ensure appropriate food labeling, expiry monitoring, stock rotation, and food storage practices are followed.
- Identify potential food safety risks and communicate concerns to the relevant departments and management.
HACCP Compliance and Documentation
- Maintain and verify HACCP monitoring records, food safety checklists, cleaning schedules, and other relevant documentation.
- Review food safety records, including temperature logs, pest control reports, sanitation records, and corrective action reports.
- Identify food safety and hygiene non-conformities during inspections and follow up with the concerned departments to ensure timely corrective actions.
- Assist with HACCP internal audits, food safety inspections, and hotel compliance assessments.
- Support the preparation of the hotel and F&B operations for Dubai Municipality inspections and other food safety audits.
- Maintain accurate records of inspections, corrective actions, training sessions, and HACCP-related activities.
- Escalate serious food safety concerns and unresolved non-conformities to management.
Stewarding Hygiene and Sanitation
- Monitor stewarding activities to ensure effective cleaning and sanitization of kitchen equipment, utensils, work surfaces, and food preparation areas.
- Ensure that proper cleaning and disinfection procedures are followed by the stewarding team.
- Monitor dishwashing operations, including the cleanliness of utensils, crockery, glassware, and other food-contact equipment.
- Inspect garbage collection and waste handling areas to ensure appropriate hygiene and sanitation standards.
- Verify that cleaning schedules are implemented and completed as required.
- Coordinate with the Stewarding Department to identify sanitation issues and ensure timely corrective actions.
- Monitor the hygienic condition of dishwashing areas, kitchen equipment, storage spaces, and other relevant operational areas.
- Candidates with previous stewarding supervision experience will be preferred.

Food Handler Hygiene and Training
- Monitor personal hygiene, grooming, and food handling practices of employees working in food preparation and service areas.
- Identify hygiene-related issues and communicate them to the relevant department supervisors.
- Assist in conducting food safety and hygiene awareness training for food handlers when required.
- Promote good hygiene practices and adherence to established food safety procedures.
- Support management in improving food safety awareness across kitchen and F&B teams.
Inspection, Coordination, and Corrective Actions
- Conduct routine inspections across kitchen, F&B, stewarding, storage, and other relevant hotel operational areas.
- Coordinate with Kitchen, F&B, Stewarding, Housekeeping, Engineering, Purchase, and other departments on food safety and hygiene matters.
- Coordinate with pest control service providers and follow up on pest-related issues and corrective actions.
- Monitor the implementation of corrective actions following inspections, audits, and reported food safety concerns.
- Assist management in preparing for Dubai Municipality inspections and other regulatory or internal audits.
- Prepare inspection reports and communicate significant findings to the relevant departments.
- Ensure that identified food safety and hygiene concerns are addressed within the required timeframe.
Job Qualifications
- Bachelor’s or Master’s degree in Food Technology, Food Science, Microbiology, or a related field.
- HACCP Level 3 certification is required.
- Food Safety Level 4 certification is required.
- Minimum 1 year of relevant experience in food safety, food hygiene, quality control, or a similar position.
- Previous hotel or hospitality experience is required.
- Good knowledge of Dubai Municipality food safety and hygiene requirements applicable to hotel and F&B operations.
- Sound understanding of HACCP principles, food hygiene, sanitation, pest control, and food safety documentation.
- Knowledge of food temperature monitoring, cleaning and sanitization procedures, and food handling practices.
- Strong inspection, communication, coordination, and reporting skills.
- Ability to work with kitchen, F&B, stewarding, and other hotel departments.
- Candidates with experience in stewarding supervision and kitchen sanitation monitoring will be preferred.
- Freshers with relevant educational qualifications and the required food safety certifications may also apply, subject to the employer’s selection criteria.
