Food Quality Controller

A leading food Condiments manufacturing company in Dubai is looking for an experienced Quality Controller to join its quality and food safety team. The role is suitable for a food quality professional with hands-on experience in food manufacturing, quality inspections, process monitoring, and compliance with UAE food safety regulations.

The company operates in the specialty food processing industry, manufacturing honey-based products, fruit fillings, and other processed food ingredients for food service, bakery, confectionery, and related applications. The Quality Controller will be responsible for monitoring raw materials, production processes, finished products, and food safety controls to ensure compliance with established quality standards and regulatory requirements.

Candidates with at least 5 years of experience in food manufacturing, particularly in quality control, quality assurance, or food safety, are encouraged to apply.

Job Responsibilities

  • Conduct routine quality inspections and checks on raw materials, in-process materials, and finished food products to ensure compliance with approved specifications and quality standards.
  • Monitor food handling, processing, preparation, and storage activities to ensure compliance with HACCP, GMP, ISO 22000, and applicable UAE food safety regulations.
  • Perform quality inspections throughout the manufacturing process, including raw material receiving, production, filling, packing, storage, and dispatch.
  • Conduct hourly quality inspections during production and packaging operations to verify product quality, process compliance, and production standards.
  • Perform line clearance before production start-up and verify the readiness of production lines, equipment, tools, and work areas.
  • Verify product weight, coding, labeling, sealing, packaging integrity, and other product-specific quality requirements.
  • Monitor critical control points (CCPs) and operational prerequisite programs (OPRPs) according to the established HACCP plan.
  • Ensure proper temperature control and monitoring of production areas, storage facilities, chillers, and freezers, where applicable.

  • Monitor the temperature of raw materials, in-process products, and finished products to ensure compliance with approved storage and handling requirements.
  • Maintain accurate quality documentation and records, including batch records, certificates of analysis (COAs), test results, inspection reports, and organoleptic and chemical test records.
  • Perform organoleptic assessments, including appearance, color, aroma, texture, and other relevant product characteristics, according to product specifications.
  • Conduct or assist with chemical and quality testing as required by the product category, approved specifications, and laboratory procedures.
  • Operate, verify, and support the calibration of QC instruments, including pH meters, weighing scales, thermometers, viscometers, and other relevant testing equipment.
  • Ensure that quality control instruments are maintained in proper working condition and that calibration and verification records are updated.
  • Identify, document, and manage non-conformities related to raw materials, production processes, packaging, and finished products.
  • Assist with root cause analysis and the implementation of corrective and preventive actions (CAPA) to address quality deviations.
  • Coordinate with production teams to resolve quality-related issues in real time and prevent recurring non-conformities.
  • Report quality deviations, food safety concerns, and process irregularities to QA/QC management without delay.
  • Monitor the cleanliness and sanitation of production premises, equipment, tools, machinery, and food delivery vehicles.
  • Verify cleaning and sanitation activities before and after production in accordance with established cleaning procedures and schedules.
  • Monitor personal hygiene practices, staff grooming standards, protective clothing, and hygienic handling practices.
  • Monitor allergen control measures and cross-contamination prevention procedures throughout production and storage operations.
  • Ensure proper implementation of FIFO (First In, First Out) and FEFO (First Expired, First Out) systems for raw materials, packaging materials, and finished products.
  • Verify the proper handling, identification, segregation, and disposition of non-conforming products.
  • Collect, label, document, and retain production samples in accordance with the company’s sample retention policy.
  • Monitor storage conditions for raw materials and finished products in warehouses, chillers, and freezers, where applicable.
  • Verify metal detector performance and other applicable food safety control devices according to established verification procedures.
  • Monitor pest control measures, waste management, and hygienic conditions within the manufacturing facility.
  • Assist in product trials, process validation, shelf-life studies, and continuous improvement activities.
  • Support product traceability procedures and participate in mock product recall exercises.
  • Assist in internal audits, regulatory inspections, and third-party certification audits.
  • Ensure compliance with company SOPs, product specifications, quality procedures, and applicable food safety requirements.
  • Support the implementation and maintenance of food safety and quality management systems across manufacturing operations.

Job Qualifications

  • Bachelor’s degree in Food Technology, Food Science, Microbiology, or a related discipline.
  • Minimum of 5+ years of experience in food manufacturing, preferably in quality control, quality assurance, or food safety roles.
  • Proven hands-on experience in a food manufacturing environment is required. Experience in processed food, food ingredients, honey-based products, fruit fillings, or similar specialty food production is an advantage.
  • Previous work experience in the UAE food manufacturing industry is preferred.
  • Strong knowledge of HACCP, GMP, ISO 22000, and applicable UAE food safety regulations.
  • Familiarity with Dubai Municipality food safety requirements and relevant food manufacturing standards.
  • Practical experience in quality inspections, process monitoring, raw material evaluation, and finished product quality assessment.
  • Knowledge of laboratory equipment, including pH meters, thermometers, weighing scales, viscometers, and other QC testing instruments.
  • Experience in quality documentation, batch records, test reports, and data logging systems.
  • Strong analytical, problem-solving, and decision-making skills.
  • Good communication and coordination skills, with the ability to work closely with production and quality management teams.
  • Strong attention to detail and the ability to identify quality and food safety deviations.
  • Willingness to work in shifts, including production-related shift schedules.
  • Strong understanding of UAE food safety regulations and manufacturing hygiene requirements.
