Flight Catering Quality Controller – Asst. Manager wanted at a leading Airlines Catering Industry in Kochi, India. Asst. Manager to join its dynamic flight kitchen and airline catering operations team in Kochi, Kerala. This is an excellent opportunity for food safety and quality professionals who have hands-on experience in flight kitchen operations, aviation catering quality systems, HACCP implementation, hygiene audits, and food safety compliance.

The ideal candidate should possess strong technical knowledge of food quality assurance systems, airline catering standards, statutory compliance, and operational monitoring within a high-volume food production environment.

Job Responsibilities

  • Manage and monitor daily quality assurance and food safety activities in the flight kitchen.
  • Ensure strict compliance with HACCP, ISO standards, GMP, GHP, and airline catering regulations.
  • Conduct regular hygiene inspections, internal audits, and operational quality checks across production and dispatch areas.
  • Lead and coordinate statutory audits, customer audits, and food safety inspections.
  • Maintain accurate documentation related to food safety systems, quality reports, corrective actions, and compliance records.
  • Monitor food handling practices, sanitation procedures, personal hygiene standards, and cleaning schedules.
  • Work closely with production, operations, and catering teams to ensure consistent product quality and food safety compliance.
  • Investigate non-conformance issues and implement corrective and preventive actions (CAPA).
  • Support continuous improvement initiatives related to food quality, operational efficiency, and hygiene standards.
  • Train and guide staff on food safety procedures, HACCP practices, and quality management systems.
  • Ensure compliance with airline catering specifications and aviation food safety requirements.

Job Qualifications

  • Bachelor’s degree or diploma in Food Technology, Food Science, Microbiology, Catering Technology, Quality Assurance, or a related field.
  • Minimum 3–5 years of experience in Flight Kitchen or Airline Catering Industry.
  • Strong understanding of:
    • HACCP implementation
    • ISO food safety standards
    • GMP & GHP practices
    • Food hygiene and sanitation
    • Catering compliance systems
    • Quality documentation and audit handling
  • Experience in managing hygiene inspections, statutory audits, and operational quality monitoring.
  • Excellent leadership, communication, analytical, and problem-solving abilities.
  • Ability to work in a fast-paced airline catering and food production environment.
  • Strong knowledge of food safety regulations and compliance standards applicable to aviation catering services.
