Luxury Hospitality in Dubai UAE is looking for a Food Safety Officer .The Food Safety Officer is responsible for maintaining the highest standards of food safety, hygiene, sanitation, and regulatory compliance across all hotel dining concepts, kitchens, food preparation areas, storage facilities, and related operations.

The role requires a hands-on food safety professional with extensive luxury hospitality experience, strong HACCP expertise, and a proven ability to implement effective food safety systems, conduct audits and inspections, investigate incidents, and deliver engaging training to diverse operational teams.

Job Responsibilities

  • Implement and maintain comprehensive Food Safety Management Systems in accordance with local regulatory requirements, HACCP principles, ISO 22000, and applicable international standards.
  • Develop, review, and update food safety policies, procedures, guidelines, checklists, and inspection protocols.
  • Ensure compliance with local Municipality food safety and sanitation requirements across all kitchens, dining outlets, storage areas, and food production facilities.
  • Conduct routine food safety inspections, hygiene audits, risk assessments, and compliance checks across Front of House and Back of House operations.
  • Identify food safety hazards, non-conformities, and potential risks and ensure timely implementation of corrective and preventive actions.
  • Establish, maintain, and regularly review HACCP systems, including hazard analysis, identification of Critical Control Points (CCPs), monitoring procedures, verification activities, and documentation.
  • Conduct regular HACCP reviews and update procedures in response to operational changes, regulatory developments, emerging risks, and industry best practices.
  • Develop and maintain effective cleaning, sanitation, food storage, temperature control, personal hygiene, pest control, and cross-contamination prevention programmes.
  • Ensure accurate and complete food safety documentation, inspection records, corrective action reports, investigation reports, and compliance records.
  • Work closely with Department Heads and operational teams to maintain consistently high standards of food hygiene and sanitation.
  • Conduct internal hygiene audits and monitor the implementation of cleaning schedules and sanitation procedures.
  • Collaborate with Procurement and relevant departments to ensure suppliers and vendors meet established food safety and quality requirements.

  • Participate in supplier evaluations and audits and support the approval and monitoring of food suppliers.
  • Maintain an up-to-date Approved Supplier List and monitor supplier performance against food safety requirements.
  • Develop and implement food safety incident and emergency response procedures.
  • Lead investigations into food safety incidents, suspected foodborne illness, contamination events, and other hygiene-related issues.
  • Ensure incidents are accurately documented, investigated, reported, and followed by appropriate corrective and preventive actions.
  • Liaise professionally with local regulatory authorities during inspections, audits, investigations, and follow-up activities.
  • Provide guidance and support during regulatory inspections and ensure findings are addressed within required timelines.
  • Prepare comprehensive management reports highlighting inspection results, trends, non-conformities, corrective actions, food safety performance, and opportunities for improvement.
  • Maintain confidentiality and security of food safety records and sensitive operational information.
  • Deliver theoretical and practical food safety and HACCP training to Food & Beverage teams and other employees.
  • Prepare effective presentations, training materials, demonstrations, and awareness programmes tailored to different operational teams.
  • Monitor the effectiveness of training programmes and implement improvements where required.
  • Provide ongoing technical guidance to employees regarding food safety, hygiene, HACCP, sanitation, and regulatory requirements.
  • Promote a strong food safety culture through visible, hands-on involvement in daily operations.
  • Work closely with operational teams to identify challenges, provide practical solutions, and improve food safety performance.
  • Encourage high standards of personal hygiene, food handling, sanitation, storage, temperature control, and workplace practices.
  • Monitor operational compliance while supporting productivity, efficiency, and the overall guest experience.
  • Stay informed about developments in international food safety, luxury hospitality, HACCP, sanitation, and regulatory requirements.
  • Introduce relevant industry best practices and innovative food safety solutions to continuously improve operational standards.

Job Responsibilites

  • Bachelor’s Degree in Food Science, Food Safety, Environmental Health, Environmental Science, Food Technology, or a related discipline.
  • Previous experience within a Food Safety and Hygiene Department of a luxury 5-star hotel group is essential.
  • Minimum 5 years of experience in hospitality and food production, preferably within luxury hotel or high-end hospitality operations.
  • Professional certification in HACCP, ISO 22000, Food Safety Management Systems, or equivalent is highly preferred.
  • Strong knowledge of local food safety regulations, Municipality requirements, and international food safety standards.
  • Demonstrated experience developing and implementing food safety programmes, policies, procedures, and HACCP systems.
  • Proven experience conducting food safety inspections, internal audits, supplier audits, investigations, and risk assessments.
  • Excellent practical understanding of HACCP principles and their application in hospitality and food production environments.
  • Strong analytical and problem-solving skills with the ability to identify, assess, and mitigate food safety risks.
  • Excellent communication, interpersonal, negotiation, and stakeholder-management skills.

  • Proven ability to deliver effective food safety training to employees at different levels.
  • Strong administrative and reporting skills with excellent attention to detail.
  • Proficiency in Microsoft Word, Excel, PowerPoint, and Outlook.
  • Excellent written and verbal English communication skills.
  • Knowledge of Arabic, Hindi, or other additional languages is an advantage.
  • Strong organisational skills with the ability to manage multiple priorities in a fast-paced hospitality environment.
  • A proactive, hands-on, and solutions-oriented approach with a strong commitment to operational excellence.
  • Ability to work collaboratively with Food & Beverage, Culinary, Procurement, Engineering, Housekeeping, and other departments.
  • Strong commitment to maintaining exceptional food safety, hygiene, sanitation, and guest safety standards.
