Assistant Hygiene Manager to join a prestigious luxury hotel in Dubai. The successful candidate will play a vital role in maintaining the highest standards of food safety, hygiene, sanitation, and regulatory compliance across all food production, storage, and service areas.

Working closely with department heads, executive chefs, purchasing teams, and quality professionals, the Assistant Hygiene Manager will assist in implementing, monitoring, and continuously improving the organization’s Food Safety Management System (FSMS) based on HACCP principles and UAE food safety regulations.

This position is ideal for professionals with strong experience in hotel food safety, hygiene management, HACCP implementation, internal auditing, and employee training.

Job Responsibilities

Food Safety Management System (FSMS)

  • Assist in the development, implementation, monitoring, and continuous improvement of the Food Safety Management System (FSMS).
  • Support the implementation of HACCP principles across all food production and service operations.
  • Ensure food safety procedures comply with UAE Municipality regulations and international food safety standards.
  • Conduct cross-verification of food safety documentation and operational practices to ensure full compliance.
  • Monitor the effectiveness of food safety programs and recommend improvements where necessary.
  • Ensure food safety risks are identified, assessed, and effectively controlled.

Hygiene Monitoring & Compliance

  • Coordinate with department heads to maintain excellent hygiene and sanitation standards throughout the hotel.
  • Carry out routine hygiene inspections in kitchens, restaurants, banquet facilities, staff cafeterias, storage areas, receiving docks, and food preparation zones.
  • Verify compliance with cleaning and sanitation schedules.
  • Monitor personal hygiene practices of food handlers and ensure corrective actions are implemented when required.
  • Maintain high standards of cleanliness in accordance with HACCP and Good Hygiene Practices (GHP).

Audits, Inspections & Corrective Actions

  • Participate in internal and external food safety audits.
  • Assist during municipality inspections, certification audits, and third-party food safety assessments.
  • Follow up on non-conformities identified during inspections, audits, and microbiological testing.
  • Ensure timely implementation, verification, and closure of corrective and preventive actions (CAPA).
  • Monitor microbiological sampling results and coordinate corrective measures with relevant departments.
  • Prepare audit reports and communicate findings to management.

Food Safety Training

  • Conduct food safety and hygiene training sessions for food handlers and hotel employees.
  • Organize induction training for newly hired food handlers.
  • Deliver regular refresher training on:
    • HACCP principles
    • Personal hygiene
    • Cross-contamination prevention
    • Cleaning and sanitation procedures
    • Allergen awareness
    • Safe food handling practices
    • Pest prevention
  • Evaluate employee competency after training sessions.
  • Monitor employee compliance with hygiene procedures and provide coaching where improvements are required.

  • Prepare food safety reports for senior management.
  • Recommend initiatives to improve hygiene standards across hotel operations.
  • Support continuous improvement projects related to food safety, sanitation, and operational excellence.
  • Assist in developing new hygiene procedures based on regulatory updates and industry best practices.

Job Qualifications

  • Bachelor’s Degree in Food Safety, Food Science, Microbiology, Hospitality Management, Environmental Health, or a related discipline.
  • Minimum 2 years of experience as an Assistant Hygiene Manager, Hygiene Officer, Food Safety Officer, or a similar position within the hotel or luxury hospitality industry.
  • HACCP Level 4 Certification.
  • HACCP Internal Auditor Certification.
  • Additional Food Safety and Hygiene certifications are highly desirable.
  • Strong knowledge of HACCP, ISO 22000, Good Hygiene Practices (GHP), Good Manufacturing Practices (GMP), and Food Safety Management Systems.
  • Thorough understanding of UAE Municipality food safety regulations and hospitality hygiene requirements.
  • Experience handling food safety inspections, internal audits, and regulatory compliance.
  • Knowledge of microbiological sampling, food safety documentation, and corrective action management.
  • Excellent communication, leadership, problem-solving, and organizational skills.
  • Ability to train and motivate employees on food safety best practices.
  • Strong computer skills, including Microsoft Office and digital food safety reporting systems.
