A leading restaurant group in Dubai wants a PIC Certified in Food Safety and Quality Control to oversee and strengthen food safety, hygiene, quality assurance, and regulatory compliance across all food operations. The ideal candidate will play a key role in ensuring full compliance with Dubai Municipality food safety regulations, HACCP standards, UAE Food Code requirements, and internal company hygiene policies.

Job Responsibilities
Food Safety, Quality Assurance & Regulatory Compliance
- Ensure complete compliance with Dubai Municipality regulations, UAE Food Code, HACCP requirements, and food safety management systems across all restaurant operations.
- Monitor and enforce food safety procedures, sanitation standards, and hygiene practices in kitchens, storage areas, food preparation zones, and service areas.
- Conduct routine hygiene inspections, internal audits, and operational assessments to identify non-conformities and ensure corrective actions are implemented.
- Supervise food handling practices including receiving, preparation, cooking, cooling, reheating, storage, and food dispatch processes.
- Verify that all food production activities comply with food safety standards, quality specifications, and operational SOPs.
- Ensure all food safety documentation, monitoring logs, temperature records, cleaning schedules, and inspection reports are properly maintained and updated.
- Monitor pest control practices, sanitation procedures, and cleaning effectiveness to maintain a hygienic food production environment.
Inspection, Monitoring & Reporting
- Inspect all operational areas including raw material receiving, packaging material inspection, storage facilities, production areas, cold rooms, and finished product dispatch sections.
- Monitor food storage temperatures, cold chain management, freezer/chiller conditions, and equipment calibration records.
- Conduct risk assessments and identify potential food contamination hazards or operational safety concerns.
- Prepare detailed inspection reports, audit findings, and corrective action plans for management review.
- Investigate customer complaints, food safety incidents, contamination risks, and quality-related issues, ensuring timely root cause analysis and preventive measures.
- Follow up on corrective and preventive actions (CAPA) to ensure continuous compliance and operational improvement.
Training & Food Safety Awareness
- Conduct food safety, hygiene, sanitation, and HACCP training sessions for food handlers and restaurant staff.
- Train newly hired employees on company food safety policies, SOPs, personal hygiene practices, allergen management, and safe food handling procedures.
- Promote a strong food safety culture and ensure staff awareness regarding hygiene compliance and operational discipline.
- Support management in maintaining continuous improvement initiatives related to food safety and quality standards.
Supplier, Receiving & Inventory Control
- Ensure all incoming raw materials and food products meet approved food safety and quality standards before acceptance.
- Verify supplier compliance with food safety requirements and approved specifications.
- Monitor FIFO (First In First Out), FEFO practices, product labeling accuracy, shelf-life compliance, and stock rotation procedures.
- Ensure safe storage conditions for dry goods, chilled items, frozen products, and packaging materials.
Job Qualifications
- Bachelor’s Degree in Food Science, Food Technology, Microbiology, Nutrition, or a related field.
- Valid PIC Certification is mandatory.
- Minimum 3 years of experience in food safety, quality assurance, or hygiene management within the restaurant, hospitality, catering, or food & beverage industry.
- Strong knowledge of Dubai Municipality food safety regulations, HACCP, GMP, sanitation standards, and UAE food compliance requirements.
- Experience conducting internal audits, hygiene inspections, and food safety training programs.
- Excellent communication, documentation, reporting, and organizational skills.
- Strong analytical thinking, problem-solving ability, and attention to detail.
- Ability to perform regular site inspections and monitor multiple operational areas daily.
- Comfortable standing for extended periods during inspections and audits.
- Flexible to work across different restaurant branches, operational sites, and shifts when required.
Food Safety Officer – Skills
- Strong understanding of food safety management systems and quality control procedures.
- Ability to work effectively under pressure in a fast-paced restaurant environment.
- Knowledge of allergen control, traceability systems, and contamination prevention practices.
- Proficiency in preparing compliance reports, audit documentation, and corrective action records.
