The role involves managing product and raw material specifications, ensuring regulatory compliance, coordinating product registrations, and maintaining accurate nutritional and labelling information. The successful candidate will work closely with Quality, Vendor Assurance, Procurement, Operations, suppliers, and other stakeholders to ensure that products meet regulatory, customer, and internal quality standards.
The position also plays an important role in maintaining audit readiness, supporting BRCGS and Dubai Municipality compliance, and driving the digitalization of food specifications and labelling processes.
Job Responsibilities
Product Specifications and Regulatory Compliance
- Oversee the preparation, review, verification, and maintenance of raw material and finished product specifications.
- Ensure that product specifications, production routings, nutritional information, and supporting documentation remain accurate and up to date.
- Manage product registrations with regulatory authorities, including the Saudi Food and Drug Authority (SFDA), Dubai Municipality, and other relevant GCC authorities.
- Ensure that products and raw materials comply with applicable UAE and GCC food regulations, customer requirements, and internal standards.
- Review regulatory requirements and identify potential compliance gaps affecting food products and production processes.
- Collaborate with suppliers and internal departments to resolve specification, regulatory, and documentation issues.

Food Labelling and Artwork Compliance
- Implement efficient labelling processes to ensure accurate and compliant labels for all food products.
- Coordinate label creation, registration, translation, artwork verification, and internal validation.
- Ensure that product labels comply with applicable regulatory requirements, including Arabic language and nutritional labelling requirements.
- Conduct thorough data validation and provide sign-off for labelling procedures and documentation.
- Verify product information, ingredient declarations, allergens, nutritional data, and other relevant labelling details.
- Coordinate with relevant teams to ensure that labelling requirements are met during new product launches and customer development projects.
Product Development and Food Technology
- Capture and validate technical data required for new product specifications and labelling.
- Support customer development projects and ensure that product specifications meet customer expectations.
- Verify and finalize raw material and finished product specifications to maintain consistent product quality.
- Participate in sensory evaluation sessions to validate meal specifications and product characteristics.
- Provide technical support for food technology projects involving different protein categories.
- Identify opportunities to improve food processing procedures, product quality, and operational efficiency.
Audits and Food Safety Management
- Maintain the Specifications function in an audit-ready condition.
- Prepare product specifications, labels, production routings, and supporting documents for internal and external audits.
- Support compliance with BRCGS, Dubai Municipality, customer, and other applicable audit requirements.
- Conduct internal audits of specification management, routing, and labelling procedures.
- Identify nonconformities, coordinate corrective actions, and monitor the timely closure of audit findings.
- Ensure that food technology and specification processes are aligned with food safety management systems and regulatory standards.
Team Leadership and Stakeholder Coordination
- Manage team workload, task delegation, and resource allocation to ensure efficient and productive operations.
- Support team members’ skills development, training, and career progression.
- Provide technical guidance on food specifications, labelling, regulatory compliance, and food processing matters.
- Conduct regular coordination meetings with Quality Operations, suppliers, Procurement, Operations, and other relevant stakeholders.
- Address specification availability challenges and ensure that technical issues are communicated and resolved promptly.
- Coordinate cross-functional activities to support product launches, regulatory registrations, and customer requirements.
Digitalization and Continuous Improvement
- Lead initiatives to digitalize food product specifications and labelling processes.
- Support the implementation of Specification Management Software to improve data accuracy, accessibility, and process efficiency.
- Identify opportunities to streamline specification creation, approval, registration, and document control.
- Implement continuous improvement initiatives to enhance operational performance and regulatory compliance.
Job Qualifications
- Bachelor’s degree in Food Science, Food Technology, Food Engineering, Food Processing, or a related discipline.
- Additional qualifications in food safety, quality management, food processing, or regulatory affairs will be an advantage.
- Professional certifications in HACCP, BRCGS, food labelling, or food safety management systems are desirable.
- Minimum of 5–7 years of relevant experience in food processing, food technology, product specifications, regulatory compliance, or a related field.
- Previous experience in a senior, supervisory, or technical leadership role within food manufacturing, airline catering, central kitchens, or large-scale food production is preferred.
- Strong knowledge of food production processes, product quality requirements, and food safety management systems.
- Practical experience in preparing and maintaining raw material and finished product specifications.
- Experience with food labelling, Arabic translations, artwork verification, and regulatory product registrations.
- Knowledge of UAE and GCC food regulations, including Dubai Municipality and SFDA requirements.
- Familiarity with BRCGS, HACCP principles, and food safety audit requirements.
- Experience working with suppliers, Quality Assurance, Procurement, Operations, and other cross-functional teams.
- Proven ability to manage technical projects, product development activities, and specification-related processes.
- Experience in process improvement, digitalization, or Specification Management Software implementation is an advantage.
- Strong analytical, documentation, communication, and problem-solving skills.
- Ability to manage multiple projects, meet deadlines, and work effectively in a fast-paced food production environment.
