A leading camel milk and dairy manufacturing company in Dubai is looking for a oriented Lab Technician to support laboratory testing, food safety compliance, quality assurance, and product analysis activities. The ideal candidate should have hands-on experience in dairy or food laboratory operations, microbiological testing, chemical analysis, and GMP/HACCP compliance within a food manufacturing environment.

This role is ideal for candidates with experience in dairy laboratories, food testing laboratories, FMCG manufacturing, beverage industries, or microbiology laboratories who are passionate about maintaining high food quality and safety standards.

The Lab Technician will be responsible for conducting routine laboratory testing, sampling, inspection, analysis, documentation, and quality control checks for raw camel milk, processed dairy products, ingredients, packaging materials, water samples, environmental swabs, and finished goods.

The role plays a critical part in ensuring product quality, food safety compliance, laboratory accuracy, and timely product release according to company quality systems, HACCP requirements, GMP standards, and applicable food regulations in the UAE.

Job Responsibilities

Laboratory Sampling & Testing

  • Collect, receive, identify, label, and prepare samples of:
    • Raw camel milk
    • In-process dairy products
    • Finished products
    • Ingredients and additives
    • Packaging materials
    • Water samples
    • Environmental and hygiene swabs
  • Perform routine laboratory analysis including:
    • Chemical testing
    • Physical testing
    • Microbiological testing
    • Organoleptic and sensory evaluation
  • Conduct dairy laboratory tests such as:
    • pH testing
    • Acidity testing
    • Fat analysis
    • SNF (Solids-Not-Fat) analysis
    • Protein analysis
    • Density testing
    • Freezing point analysis
    • Antibiotic residue testing
    • Microbial count analysis
    • Hygiene and environmental swab testing
  • Ensure all laboratory testing activities are completed accurately and within defined timelines to support production release and quality approval processes.
  • Follow approved laboratory methods, SOPs, and food safety standards during testing procedures.

Laboratory Documentation & Reporting

  • Maintain accurate laboratory records, reports, and documentation in approved formats and systems.
  • Record test results immediately and accurately in:
    • Logbooks
    • Laboratory worksheets
    • Digital systems
    • Calibration records
    • Equipment logs
  • Report out-of-specification (OOS) results, contamination risks, deviations, and abnormal trends to the Laboratory Supervisor or Quality Manager immediately.
  • Maintain traceability records for:
    • Sample tracking
    • Reagent preparation
    • Media preparation
    • Calibration activities
    • Product investigations
    • Customer complaints
    • Internal audits
  • Ensure proper filing and retention of laboratory documentation according to company quality management systems.

Laboratory Equipment Handling & Calibration

  • Operate and maintain laboratory instruments and testing equipment including:
    • pH meters
    • Incubators
    • Autoclaves
    • Analytical balances
    • Centrifuges
    • Water baths
    • Microscopes
    • Milk analysers
    • Laboratory ovens
    • Testing instruments and measuring devices
  • Ensure all equipment is:
    • Cleaned
    • Verified
    • Calibrated
    • Maintained
    • Functioning correctly as per preventive maintenance schedules
  • Prepare laboratory reagents, culture media, standards, and consumables according to approved methods and laboratory procedures.
  • Monitor stock levels of:
    • Chemicals
    • Glassware
    • Testing kits
    • Laboratory media
    • Consumables
    • Reagents
  • Coordinate with the supervisor for timely replenishment of laboratory supplies.

Food Safety, Hygiene & Compliance

  • Follow all food safety and laboratory safety procedures in compliance with:
    • HACCP
    • GMP
    • GLP
    • ISO standards
    • Company quality policies
  • Ensure proper handling and disposal of:
    • Chemicals
    • Microbiological materials
    • Waste materials
    • Glassware
    • Hazardous laboratory substances
  • Maintain cleanliness, hygiene, and organization of laboratory work areas at all times.
  • Support:
    • Internal quality audits
    • External audits
    • Shelf-life studies
    • Product validation activities
    • Quality improvement projects
    • Food safety inspections
  • Participate in investigations related to quality complaints, product deviations, and contamination incidents.

Coordination & Communication

  • Coordinate with Production, Quality Assurance, Maintenance, Farm Operations, and Stores departments regarding:
    • Sample collection
    • Product testing status
    • Quality deviations
    • Product release approvals
    • Corrective actions
  • Support root cause analysis and corrective action implementation for customer complaints and laboratory deviations.
  • Assist the Quality Manager and Laboratory Supervisor in daily laboratory operations and continuous improvement activities.

Job Qualification

  • Diploma or Bachelor’s Degree in:
    • Food Technology
    • Dairy Technology
    • Microbiology

    • Related discipline
  • 2–5 years of experience in:
    • Dairy laboratory testing
    • Food manufacturing laboratory operations

    • Microbiology laboratories
    • Food quality assurance laboratories
