Quality Controller for QSR

A rapidly expanding Quick Service Restaurant (QSR) chain in Sharjah, UAE is seeking an experienced Quality Controller to oversee food quality, food safety, operational compliance, and brand standards across multiple restaurant outlets. The company’s flagship product is Shawarma, and the ideal candidate will have extensive hands-on experience in QSR restaurant operations, food production, and quality management.

This role is ideal for professionals with a strong background in Food Safety, Quality Assurance (QA), Quality Control (QC), HACCP, Restaurant Operations, and Kitchen Management. The successful candidate will ensure that every outlet consistently delivers safe, hygienic, and high-quality food while maintaining operational excellence and customer satisfaction.

Job Responsibilities

SOP Implementation and Operational Compliance

  • Ensure all outlets consistently implement company Standard Operating Procedures (SOPs), operational guidelines, and quality standards.
  • Monitor compliance with approved food preparation methods, cooking procedures, hygiene protocols, and customer service standards.
  • Conduct routine operational reviews to identify compliance gaps and recommend corrective and preventive actions.
  • Maintain consistency in operational processes across all restaurant branches.

Quality Audits and Restaurant Inspections

  • Conduct scheduled and surprise quality audits across restaurant locations.
  • Inspect kitchens, food preparation areas, cold storage, dry storage, receiving areas, and customer service sections.
  • Evaluate outlet performance against company quality standards and regulatory requirements.
  • Prepare comprehensive audit reports, documenting observations, risks, and corrective action plans.
  • Follow up with outlet managers to ensure timely closure of audit findings.

Food Safety and Hygiene Management

  • Ensure full compliance with HACCP principles, UAE food safety regulations, and company food safety management systems.
  • Monitor:
    • Personal hygiene and employee grooming standards
    • Safe food handling practices
    • Cleaning and sanitation programs
    • Equipment hygiene and maintenance
    • Temperature monitoring and documentation
    • Cross-contamination prevention
    • Pest control measures
    • Safe storage and stock rotation (FIFO/FEFO)
    • Food labeling and traceability
  • Verify compliance with all food safety documentation and records.

Staff Training and Performance Development

  • Conduct regular food safety, quality assurance, and SOP training sessions for kitchen and restaurant employees.
  • Provide practical coaching on:
    • HACCP implementation
    • Product quality standards
    • Food hygiene
    • Proper food handling techniques
    • Shawarma preparation methods
    • Portion control
    • Customer service excellence
  • Evaluate employee performance and ensure consistent implementation of training outcomes.

Raw Material Inspection and Supplier Quality Assurance

  • Inspect incoming food ingredients, meat, vegetables, spices, sauces, packaging materials, and other supplies.
  • Verify:
    • Product quality and freshness
    • Supplier compliance with approved specifications
    • Storage temperatures
    • Expiry dates and shelf life
    • Receiving procedures
    • Cold chain integrity
  • Collaborate with procurement and warehouse teams to maintain high-quality raw materials.

Product Quality Control

Ensure every menu item meets company specifications by monitoring:

  • Approved recipes
  • Portion sizes
  • Product appearance
  • Taste consistency
  • Texture and presentation
  • Shawarma marination process
  • Meat slicing techniques
  • Cooking quality
  • Final product presentation
  • Brand consistency across all outlets

Cooking Process and Temperature Monitoring

  • Verify cooking temperatures and cooking times for all food products.
  • Monitor hot holding, cooling, reheating, refrigeration, and freezing procedures.
  • Ensure temperature records are maintained accurately.
  • Verify proper use, calibration, and maintenance of kitchen equipment.
  • Ensure compliance with food safety critical control points (CCPs).

Food Waste and Cost Control

  • Monitor food wastage, overproduction, spoilage, and portion control.
  • Analyze production losses and identify opportunities for improvement.
  • Recommend corrective actions to reduce food costs while maintaining quality standards.
  • Support inventory control and yield management initiatives.

Customer Complaint Investigation

  • Investigate customer complaints related to food quality, food safety, taste, service, and consistency.
  • Conduct root cause analysis and implement corrective and preventive actions (CAPA).
  • Coordinate with restaurant managers to prevent recurring quality issues.
  • Monitor complaint trends and recommend continuous improvement initiatives.

Mystery Shopper Evaluation

  • Coordinate mystery shopper programs across restaurant branches.
  • Evaluate:
    • Food quality
    • Service standards
    • Product consistency
    • Staff professionalism
    • Outlet cleanliness
    • Customer satisfaction
  • Develop action plans to improve outlet performance based on mystery shopper findings.

Job Qualifications

  • Bachelor’s degree in Food Science, Food Technology, Hospitality Management, Nutrition, Quality Assurance, or a related discipline.
  • HACCP Certification is mandatory.
  • Food Safety Level 3 certification is highly preferred.
  • Additional certifications in ISO 22000, GMP, Internal Auditing, or Quality Management Systems will be an advantage.
  • Minimum 6 years of experience in Food & Beverage Quality Control, Quality Assurance, or Food Safety.
  • Previous experience within Quick Service Restaurant (QSR) operations is essential.
  • Experience with Shawarma production, grilled meat operations, Arabic cuisine, or Middle Eastern restaurant concepts is highly desirable.
  • Strong background in conducting operational audits, implementing corrective actions, and maintaining food safety compliance.
