Job Responsibilities
Food Safety, Quality Assurance & HACCP Compliance
- Monitor daily compliance with HACCP, Dubai Municipality food safety regulations, GMP (Good Manufacturing Practices), and food hygiene requirements.
- Conduct routine food safety inspections throughout production, preparation, packing, and dispatch operations.
- Perform regular kitchen hygiene audits and identify areas requiring corrective action.
- Verify temperature monitoring records for cooking, cooling, cold storage, freezers, and transportation units.
- Ensure food safety documentation, records, and monitoring forms are accurately completed and maintained.
- Monitor implementation of cleaning and sanitation schedules across all production areas.
- Verify compliance with personal hygiene requirements, including handwashing, PPE usage, grooming standards, and safe food handling practices.
- Conduct quality inspections on incoming raw materials, ingredients, semi-finished products, and finished meals.
- Ensure product specifications, portion control, labeling requirements, and packaging standards are consistently achieved.
- Investigate customer complaints, quality deviations, and food safety incidents while implementing effective corrective and preventive actions (CAPA).
- Assist in preparing the facility for municipality inspections, HACCP audits, ISO audits, and internal quality assessments.
- Maintain food safety management system documentation and ensure records remain audit-ready.
Production Planning & Operational Coordination
- Prepare, review, and distribute daily production plans and manufacturing schedules.
- Print and organize recipe cards, batch sheets, and production instructions for kitchen teams.
- Verify production quantities against customer orders and daily meal plan requirements.
- Monitor ingredient availability and coordinate with procurement and inventory teams to avoid production disruptions.
- Prepare purchase requisitions and ingredient requirement forecasts based on production plans.
- Track production progress and communicate delays, shortages, equipment issues, or operational concerns to management.
- Monitor production performance indicators including wastage, shortages, rework, and product non-conformities.
- Maintain accurate daily production records and operational reports.
- Support continuous improvement initiatives aimed at increasing kitchen productivity and operational efficiency.
Kitchen Hygiene & Sanitation Control
- Conduct daily opening and closing inspections of production and storage areas.
- Ensure cleanliness and sanitation standards are maintained across all kitchen sections.
- Monitor cleaning and disinfection procedures for food-contact surfaces, utensils, equipment, and production areas.
- Verify that sanitation chemicals are used safely and according to approved procedures.
- Follow up on corrective actions with kitchen supervisors and department heads.
- Ensure all non-conformance reports are documented, investigated, and closed within established timelines.
- Promote a strong food safety culture and hygiene awareness among all employees.
Documentation, Reporting & Audit Management
- Maintain accurate QA/QC reports, inspection records, audit findings, and corrective action reports.
- Prepare daily, weekly, and monthly food safety and quality performance reports.
- Analyze quality trends and provide recommendations for process improvements.
- Support management during internal audits, customer audits, and regulatory inspections.
- Ensure document control procedures are properly followed.
- Assist in implementing quality improvement projects and food safety initiatives.
Job Qualifications
- Bachelor’s Degree in Food Technology, Food Science, Microbiology, Nutrition, Quality Assurance, or a related discipline.
- HACCP Certification or equivalent food safety qualification.
- Minimum 2 years of experience in a meal plan company, catering company, central kitchen, food manufacturing facility, airline catering, healthcare catering, or large-scale food production environment.
- Strong understanding of HACCP principles, food safety systems, and hygiene regulations.
- Experience conducting food safety inspections, internal audits, and quality control activities.
- Good knowledge of Microsoft Excel, Word, and reporting tools.
- Strong analytical, organizational, and problem-solving skills.
- Excellent written and verbal communication skills in English.
- Ability to work effectively in a fast-paced, high-volume food production environment.
Food Quality Controller – Skills
- ISO 22000 Food Safety Management System experience.
- Internal Auditor certification for HACCP or ISO 22000.
- Experience supporting production planning and kitchen operations.
- Knowledge of inventory management, stock control, and ingredient forecasting.
- Familiarity with Dubai Municipality food safety requirements.
- Previous experience within healthy meal preparation, nutrition-focused food production, cloud kitchens, or central kitchen operations.
