A leading bakery and food production company in Dubai is looking for an Assistant Quality Controller to support quality assurance, food safety, and compliance activities throughout the manufacturing and distribution process. The successful candidate will work closely with the Quality Controller and Food Safety Team to ensure that all products meet company quality standards, regulatory requirements, and customer expectations while maintaining compliance with GMP, GHP, HACCP, and ISO 22000 food safety standards.

Job Responsibilities

Quality Control and Product Inspection

  • Assist in monitoring product quality during receiving, production, packaging, storage, and dispatch operations.
  • Conduct routine inspections of raw materials, ingredients, packaging materials, work-in-progress products, and finished bakery products.
  • Verify that products meet established quality specifications, safety requirements, and customer standards.
  • Monitor production processes to ensure consistent product quality and compliance with food safety procedures.
  • Identify and report quality deviations, defects, and non-conforming products to the Quality Controller.

Food Safety and HACCP Monitoring

  • Support the implementation and maintenance of the Food Safety Management System (FSMS).
  • Monitor and record Critical Control Points (CCPs) and Operational Prerequisite Programs (OPRPs) according to HACCP requirements.
  • Assist in allergen management and cross-contamination prevention programs.
  • Verify sanitation and cleaning activities to ensure food safety compliance.
  • Report food safety hazards, risks, and concerns immediately to the Food Safety Team Leader.

GMP, GHP, and Hygiene Compliance

  • Conduct daily Good Manufacturing Practice (GMP) and Good Hygiene Practice (GHP) inspections.
  • Monitor employee hygiene practices and compliance with food safety regulations.
  • Perform routine housekeeping inspections across production and storage areas.
  • Ensure production environments remain clean, organized, and compliant with food safety standards.

Documentation and Record Management

  • Maintain accurate quality control records and food safety documentation.
  • Record inspection findings, temperature logs, sanitation checks, and corrective actions.
  • Ensure all quality and food safety documents are updated, organized, and readily available for audits.
  • Support traceability systems and documentation requirements.

Temperature and Storage Monitoring

  • Monitor and verify temperature control records for raw materials, storage areas, refrigerated products, and finished goods.
  • Conduct routine temperature checks to ensure product safety and regulatory compliance.
  • Assist in identifying and correcting temperature-related deviations.

Audits and Continuous Improvement

  • Support internal food safety audits and quality inspections.
  • Participate in mock recall exercises and product traceability activities.
  • Assist in investigating customer complaints related to product quality and food safety issues.
  • Contribute to continuous improvement initiatives aimed at enhancing product quality and operational efficiency.

Job Qualifications

  • Diploma or Bachelor’s Degree in Food Technology, Food Science, Microbiology, Biotechnology, Quality Assurance, or a related field preferred.
  • Previous experience in food manufacturing, bakery production, quality control, or food safety is an advantage.
  • Basic understanding of HACCP, GMP, GHP, ISO 22000, and food safety regulations.
  • Good documentation, reporting, and record-keeping skills.
  • Strong attention to detail and commitment to maintaining quality standards.
  • Ability to work effectively in a fast-paced food production environment.
  • Good communication and teamwork skills.
  • Willingness to learn and develop professionally in food quality assurance and food safety management.
