Job Responsibilities
Food Safety Management System (FSMS) Implementation
- Assist in the development, implementation, monitoring, and continuous improvement of the organization’s Food Safety Management System (FSMS).
- Ensure all food safety programs comply with HACCP principles, international food safety standards, and UAE municipality regulations.
- Support hospitality properties in establishing and maintaining effective food safety and hygiene systems.
- Review operational procedures and recommend improvements to strengthen food safety controls.
- Ensure compliance with company quality assurance standards across kitchens, production units, banquet facilities, and food delivery operations.
Food Safety Audits, Inspections & Compliance
- Conduct regular food safety and hygiene inspections across:
- Commercial kitchens
- Food production facilities
- Catering operations
- Event sites
- Food transportation and delivery units
- Perform internal HACCP audits according to approved audit schedules.
- Carry out supplier approval audits and vendor surveillance inspections to ensure supplier compliance with food safety standards.
- Identify non-conformities, operational gaps, and food contamination risks during inspections.
- Prepare detailed audit and inspection reports with corrective and preventive action recommendations.
- Monitor implementation and effectiveness of corrective action plans.
HACCP Monitoring & Documentation
- Verify and maintain HACCP documentation across assigned hospitality properties.
- Ensure all monitoring records, CCP logs, verification activities, calibration records, and food safety reports are properly maintained.
- Support HACCP team leaders in updating risk assessments and food safety documentation.
- Ensure documentation is available in both physical and digital formats for internal and external audits.
- Review food safety records for accuracy, completeness, and compliance.
Food Safety Training & Awareness
- Conduct food safety and hygiene training programs for food handlers, kitchen staff, supervisors, and operational teams.
- Deliver training sessions on:
- HACCP implementation
- Personal hygiene
- Cross-contamination prevention
- Cleaning and sanitation
- Safe food handling practices
- Temperature control and monitoring
- Provide coaching and practical guidance to improve food safety culture within operations.
- Maintain training attendance records and evaluate training effectiveness.

Food Safety Monitoring Systems
- Monitor and verify wireless temperature monitoring systems used in food storage and production areas.
- Conduct environmental hygiene and personal hygiene monitoring using ATP testing equipment.
- Verify temperature records for refrigerators, freezers, hot holding equipment, and transportation vehicles.
- Investigate temperature deviations and ensure immediate corrective actions are implemented.
Medical Screening & Employee Hygiene Compliance
- Coordinate with Human Resources and operational departments to ensure medical screening schedules for food handlers are maintained.
- Verify that all food handlers possess valid occupational health and medical fitness certificates.
- Ensure health screening records are updated and compliant with UAE food safety regulations.
- Monitor employee hygiene compliance and report any health-related food safety concerns.
Food Safety Incident Investigation & Product Recall
- Investigate customer complaints, food safety incidents, and contamination-related concerns.
- Conduct root cause analysis and prepare detailed incident investigation reports.
- Coordinate with suppliers and operational teams for product traceability and recall procedures.
- Oversee food withdrawal and recall activities when required.
- Implement preventive measures to reduce future food safety risks.
Quality Assurance Performance Monitoring
- Monitor food safety and quality performance indicators across assigned properties.
- Analyze QA trend reports and identify recurring operational issues.
- Coordinate with property HACCP team leaders to improve compliance scores and audit performance.
- Support continuous improvement initiatives related to food quality, hygiene, and operational excellence.
Health, Safety & Regulatory Compliance
- Ensure all activities are carried out in compliance with:
- HACCP requirements
- ISO 22000 standards
- Food hygiene regulations
- UAE municipality food safety guidelines
- Occupational health and safety standards
- Promote a safe working environment for all employees and food handlers.
- Support external audits, inspections, and certification activities.
Job Qualifications
- Bachelor’s Degree in Food Science, Food Technology, Microbiology, Biotechnology, or related discipline.
- Master’s Degree in Food Technology or related field is an advantage.
- 2–4 years of experience in food safety, quality assurance, HACCP, or hospitality food operations.
- Strong knowledge of:
- HACCP systems
- Food Safety Management Systems (FSMS)
- ISO 22000
- GFSI standards such as BRCGS, SQF, or FSSC 22000
- Food hygiene regulations and food safety compliance
- HACCP Certification or Food Safety Certification preferred.
- Experience conducting food safety audits and supplier assessments.
- Familiarity with ATP monitoring systems and temperature monitoring technologies.
- Excellent analytical, problem-solving, reporting, and communication skills.
- Ability to identify non-conformities and implement effective corrective and preventive actions.
- Strong organizational and documentation management skills.
- Proficiency in Microsoft Office and digital food safety systems.
