A leading luxury hospitality organization in Abu Dhabi is seeking a Food Safety and Quality Assurance (FSQA) Specialist to oversee food safety, hygiene compliance, HACCP implementation, and quality assurance operations across multiple hospitality properties. The ideal candidate will play a critical role in maintaining the highest standards of food safety, regulatory compliance, and operational excellence within luxury hotels, restaurants, catering operations, banquet facilities, and food production environments.
This position is ideal for professionals with strong expertise in HACCP, Food Safety Management Systems (FSMS), hygiene auditing, supplier quality assurance, food contamination prevention, and hospitality quality standards.
Key Responsibilities
Food Safety Management System (FSMS) Implementation
- Assist in the development, implementation, monitoring, and continuous improvement of the Food Safety Management System (FSMS) across hospitality properties.
- Ensure all food safety procedures comply with HACCP principles, local Abu Dhabi food regulations, and international food safety standards.
- Support hotel and hospitality teams in establishing, maintaining, and improving FSMS documentation and operational compliance.
- Conduct regular reviews of food safety procedures, SOPs, and hygiene protocols to ensure operational effectiveness.
- Coordinate with department heads and property management teams to strengthen food safety culture across all operations.
Food Safety, Hygiene Inspections & HACCP Audits
- Conduct scheduled food safety inspections of kitchens, restaurants, banquet facilities, food production units, event locations, storage areas, and food delivery facilities.
- Perform internal HACCP audits in accordance with approved audit schedules and quality assurance programs.
- Evaluate food handling practices, temperature controls, cleaning procedures, pest control measures, and sanitation standards.
- Carry out supplier approval audits, vendor assessments, and surveillance audits for food suppliers and contractors.
- Identify non-conformities, operational risks, and food safety gaps, and prepare detailed audit findings and corrective action reports.
- Recommend process improvements to enhance food safety performance and operational efficiency.
Food Safety Training & Awareness
- Deliver food safety, hygiene, GMP, and HACCP training sessions to hospitality employees, food handlers, kitchen staff, and operational teams.
- Provide coaching and guidance to reduce food contamination risks and improve safe food handling practices.
- Develop awareness initiatives that promote a strong food safety culture within luxury hospitality environments.
- Monitor training effectiveness through evaluations, observations, and compliance assessments.
- Maintain accurate training attendance records, competency evaluations, and compliance documentation.
Food Safety Monitoring & Verification
- Monitor and verify wireless temperature monitoring systems installed across hospitality properties.
- Ensure proper calibration and functionality of food safety monitoring equipment.
- Conduct ATP testing, environmental hygiene monitoring, and personal hygiene verification activities.
- Verify compliance with cold chain management, food storage temperatures, and sanitation standards.
- Review food safety monitoring logs, verification records, and corrective action reports.
Medical Screening & Food Handler Compliance
- Coordinate with Human Resources and operational departments to ensure timely medical screening of food handlers.
- Verify that food handler medical certificates, health records, and screening schedules comply with UAE food safety regulations.
- Ensure all health-related documentation is maintained accurately and confidentially.
- Follow up on health-related non-compliance issues and ensure corrective actions are implemented immediately.
Food Safety Incident Investigation & Product Recall Management
- Investigate food safety complaints, contamination incidents, customer feedback, and hygiene-related concerns.
- Conduct root cause analysis and prepare detailed incident investigation reports for management review.
- Coordinate with suppliers and vendors to ensure food product traceability during recalls or withdrawals.
- Support and oversee food recall procedures in the event of contamination, foodborne illness, or product safety concerns.
- Implement preventive measures to minimize recurrence of food safety incidents.
HACCP Documentation & Compliance Management
- Verify and maintain HACCP documentation across all assigned hospitality properties.
- Ensure food safety records, monitoring logs, verification activities, corrective actions, and testing reports are properly maintained.
- Support digital documentation systems and property compliance folders.
- Ensure all HACCP plans and prerequisite programs are regularly reviewed and updated.
Quality Assurance Performance & Continuous Improvement
- Monitor food safety and quality performance indicators against established hospitality quality benchmarks.
- Coordinate with property HACCP team leaders regarding quality assurance trends, audit outcomes, and performance improvement initiatives.
- Review corrective and preventive action plans to ensure effectiveness and long-term compliance.
- Support operational teams with root cause analysis and continuous improvement strategies.
- Assist management in implementing best practices for food quality, hygiene, and regulatory compliance.
Health, Safety & Regulatory Compliance
- Ensure all activities are performed in accordance with occupational health and safety regulations.
- Promote safe working practices within kitchens, food production areas, and hospitality operations.
- Stay updated with Abu Dhabi food safety regulations, HACCP standards, municipality requirements, and international hospitality compliance standards.
Job Qualifications
- Bachelor’s Degree in Food Technology, Food Science, Microbiology, Nutrition, Hospitality Management, or a related field.
- HACCP Certification, ISO 22000, Level 3 Food Safety, or equivalent food safety qualifications preferred.
- Minimum 3–5 years of experience in Food Safety & Quality Assurance within luxury hospitality, hotels, catering, or food service operations.
- Strong knowledge of HACCP, GMP, FSMS, food hygiene auditing, and UAE food safety regulations.
- Experience conducting food safety inspections, supplier audits, and incident investigations.
- Excellent communication, reporting, training, and analytical skills.
- Proficiency in Microsoft Office and digital food safety monitoring systems.
