Food Quality and Safety Executive -PIC Certified hirings to join a leading Chinese restaurant in Dubai. The ideal candidate will be responsible for ensuring full compliance with UAE Food Safety Regulations, Dubai Municipality Food Code, and internal hygiene standards. This role plays a critical part in maintaining food quality, safety, sanitation, and HACCP compliance across all food handling and production processes.
The candidate must demonstrate strong expertise in food safety management systems, PIC (Person-in-Charge) responsibilities, hygiene audits, and quality assurance practices within the hospitality or F&B sector.
Job Responsibilities
Food Safety & Regulatory Compliance
- Ensure strict adherence to Dubai Municipality food safety regulations, HACCP principles, and UAE Food Code requirements.
- Implement and monitor food safety management systems (FSMS) across all kitchen and food handling areas.
- Conduct routine hygiene inspections, internal audits, and risk assessments in food preparation, receiving, and storage areas.
- Monitor critical control points (CCPs) including food handling, cooking temperatures, cooling procedures, and storage conditions.
- Maintain accurate and up-to-date food safety documentation, logs, and compliance records.
Training & Food Safety Culture
- Deliver food safety and hygiene training programs for kitchen staff and food handlers.
- Act as the Person-in-Charge (PIC) to ensure compliance during all operational hours.
- Train new employees on Standard Operating Procedures (SOPs), GMP, and personal hygiene practices.
- Promote and strengthen a proactive food safety culture within the organization.
Monitoring, Inspection & Reporting
- Monitor all operational processes from receiving to final product dispatch to ensure quality and safety standards.
- Perform regular inspections of raw materials, packaging materials, processing stages, and finished products.
- Prepare detailed inspection reports, audit findings, and corrective action plans (CAPA).
- Follow up on corrective and preventive actions to ensure compliance and continuous improvement.
- Investigate food safety incidents, customer complaints, and contamination risks, ensuring timely resolution.
Supplier Control & Storage Management
- Verify that all incoming raw materials meet food safety and quality specifications.
- Monitor and maintain cold chain management, including temperature control for chilled and frozen items.
- Ensure compliance with FIFO (First In, First Out) and FEFO (First Expiry, First Out) practices.
- Check product labelling, shelf life, traceability, and storage conditions.
Job Qualifications
- Bachelor’s degree in Food Science, Food Technology, Microbiology, or related field.
- PIC Certification (Person-in-Charge) approved by Dubai Municipality is mandatory.
- 1–2 years of experience in food safety, quality assurance, or HACCP roles within restaurants, hospitality, or F&B industry (freshers with strong knowledge may apply).
- Strong understanding of Dubai Municipality Food Code, HACCP, GMP, and food hygiene regulations.
- Excellent communication, reporting, and documentation skills.
- High attention to detail with strong analytical and problem-solving abilities.
- Ability to conduct daily inspections in kitchen and food production areas.
- Comfortable standing for extended periods and working in a fast-paced environment.
- Flexibility to work different shifts and multiple restaurant locations if required.
