Hygiene Officer wanted to join a prestigious luxury hospitality brand in Dubai, ensuring the highest standards of food safety, hygiene compliance, and quality assurance across all food production and service areas. The ideal candidate will have hands-on experience in HACCP implementation, ISO 22000 standards, and UAE food safety regulations, along with a strong commitment to maintaining world-class hygiene practices in a fast-paced hospitality environment.
Job Responsibilities
Food Safety & Hygiene Operations
- Assist in the implementation and continuous improvement of food safety management systems (FSMS), hygiene policies, and standard operating procedures across all departments.
- Conduct daily hygiene inspections, kitchen audits, and food safety walk-throughs to ensure compliance with internal and regulatory standards.
- Monitor adherence to HACCP principles, ISO 22000 requirements, and Dubai Municipality food safety regulations.
- Ensure proper execution of cleaning schedules, sanitation procedures, and waste management systems.
Compliance, Audits & Documentation
- Maintain accurate and up-to-date food safety records, logs, and documentation, including temperature logs, cleaning checklists, and inspection reports.
- Support internal audits, third-party inspections, and regulatory audits by ensuring documentation readiness and compliance.
- Identify non-conformities, report deviations, and follow up on corrective and preventive actions (CAPA).
- Coordinate with external laboratories for microbiological testing and sampling, ensuring timely reporting and corrective measures.

Quality Assurance & Risk Management
- Assist in conducting food safety risk assessments and identifying improvement opportunities in hygiene practices.
- Investigate guest complaints related to food safety, including potential foodborne illness cases, and ensure proper documentation and resolution.
- Monitor supplier hygiene standards and participate in supplier audits and evaluations.
Training & Awareness
- Deliver basic food hygiene and safety training sessions to employees (if certified), ensuring awareness of best practices.
- Maintain updated training records and compliance documentation for all staff.
- Promote a strong food safety culture and hygiene awareness throughout the organization.
Reporting & Coordination
- Track hygiene KPIs and prepare daily, weekly, and monthly reports for management review.
- Participate in Hygiene Committee meetings, document minutes, and follow up on action plans.
- Coordinate the availability and distribution of hygiene tools, chemicals, and safety equipment.
- Perform additional duties as assigned by the Executive Assistant Manager (EAM) – Food & Beverage.
Skills & Competencies
- Strong knowledge of food safety standards, HACCP systems, ISO 22000, and UAE regulations.
- Excellent attention to detail, inspection, and audit skills.
- Good communication and interpersonal abilities to interact with cross-functional teams.
- Strong organizational and documentation skills.
- Ability to work efficiently in a fast-paced luxury hospitality environment.
- Problem-solving mindset with a proactive approach to risk management and compliance.
Job Qualifications
- Bachelor’s degree or diploma in Food Science, Microbiology, Food Technology, or a related field.
- Minimum 2–3 years of experience in food safety, hygiene, or quality assurance within the hospitality, catering, or food industry in Dubai/UAE.
- Basic certification or training in HACCP and food safety systems is preferred.
- Proficiency in MS Office (Word, Excel, Outlook) for reporting and documentation.
