Luxury Hotels and Hospitality Industry in Dubai, UAE is looking for a Food Safety Supervisor – Hygiene , food safety professionals with a strong background in HACCP, ISO 22000, and UAE food safety regulations, particularly within 4-star or 5-star hotel environments.
As a Food Safety Supervisor, you will be responsible for ensuring compliance with food safety legislation, implementing hygiene standards across all food and beverage operations, conducting routine inspections, managing HACCP documentation, coordinating audits, and promoting a strong food safety culture throughout the hotel. The role requires close collaboration with culinary, stewarding, receiving, and restaurant teams to ensure guests receive safe, high-quality food prepared under strict hygiene standards.
Job Responsibilities
The Hygiene & Food Safety Supervisor will oversee all food safety and sanitation activities throughout the hotel’s food production and service areas. Responsibilities include:
- Conduct daily inspections of kitchens, restaurants, bars, receiving areas, stewarding sections, chemical storage rooms, and food preparation zones.
- Monitor employee hygiene practices, including handwashing procedures, grooming standards, uniform compliance, and correct use of personal protective equipment (PPE).
- Supervise stewarding operations by verifying dishwasher temperatures, sanitation cycles, cleaning schedules, and chemical dilution accuracy.
- Ensure proper food handling practices, including segregation of raw and cooked foods, temperature monitoring, thawing procedures, blast chilling, hot holding, and cold storage controls.
- Inspect supplier deliveries to verify food temperatures, packaging integrity, product quality, expiry dates, and supplier compliance.
- Maintain complete HACCP documentation, including Critical Control Point (CCP) monitoring records, cleaning schedules, sanitation logs, corrective action reports, and audit documentation.
- Coordinate microbiological testing of food, water, ice, and food contact surfaces through accredited laboratories.
- Review laboratory reports and implement Corrective and Preventive Actions (CAPA) whenever food safety deviations occur.
- Serve as the primary point of contact during inspections conducted by Dubai Municipality, ADAFSA, or other regulatory authorities.
- Support internal food safety audits, municipal inspections, HACCP verification activities, and ISO 22000 compliance assessments.
- Deliver food hygiene awareness training and Person in Charge (PIC) programs for culinary, stewarding, receiving, and food service employees.
- Investigate food safety incidents, identify root causes, recommend corrective actions, and report findings to hotel management.
- Stay updated with UAE food safety legislation, municipal regulations, and international food safety management systems.
- Prepare reports, compliance records, and performance dashboards using Microsoft Office applications.
Job Qualifications
Applicants should possess:
- Bachelor’s Degree in Food Science, Food Technology, Microbiology, Hospitality Management, or a related discipline.
- HACCP Level 3 or Level 4 certification.
- Certified Person in Charge (PIC) Level 3 or equivalent municipal certification.
- Previous experience as a Hygiene Supervisor, Food Safety Supervisor, Hygiene Officer, or Food Safety Officer in a luxury hotel environment.
