Food Safety & Hygiene Supervisor wanted at a leading Hospitality and Luxury Brand in Dubai, UAE to ensure the highest standards of food safety, sanitation, and hygiene across all hotel operations. The ideal candidate will be responsible for maintaining compliance with HACCP systems, UAE municipality regulations, and internal food safety policies while promoting a strong hygiene culture across all departments.

Job Responsibilities

Food Safety & Hygiene Management

  • Maintain and continuously upgrade sanitation and hygiene standards across all food production, storage, and service areas.
  • Ensure all food served to guests and staff is safe, hygienic, and free from contamination.
  • Monitor cleanliness of kitchens, storage areas, receiving zones, and waste disposal systems.

HACCP System Implementation

  • Manage and consolidate food safety data within the HACCP system.
  • Ensure full compliance with HACCP procedures and documentation requirements.
  • Handle and investigate customer complaints related to food safety and hygiene.
  • Communicate key food safety issues, risks, and updates to management and department heads (HODs).

Auditing & Compliance

  • Lead and conduct bi-monthly internal self-audits as per HACCP standards.
  • Verify implementation of corrective and preventive actions (CAPA) from audits, inspections, and microbiological test results.
  • Ensure compliance with UAE municipality food safety regulations and hospitality hygiene standards.

Corrective Actions & Continuous Improvement

  • Identify hygiene gaps and implement corrective actions promptly.
  • Monitor effectiveness of corrective actions and ensure proper closure of non-conformities.
  • Promote continuous improvement in food safety practices across all departments.

Training & Development

  • Conduct regular training sessions for food handlers in collaboration with chefs and department heads.
  • Educate staff on hygiene best practices, personal hygiene, allergen control, and safe food handling.
  • Strengthen food safety awareness and build a strong hygiene culture within the organization.

Coordination & Reporting

  • Coordinate closely with Executive Chef, F&B teams, and management to ensure consistent hygiene standards.
  • Maintain accurate and up-to-date records of inspections, audits, training, and hygiene activities.
  • Provide regular reports on food safety performance and risk areas.

Job Qualifications

  • Diploma or Bachelor’s degree in Food Science, Food Technology, Microbiology, or related field.
  • Minimum 3–5 years of experience in food safety and hygiene within hotels, restaurants, or hospitality industry in the UAE.
  • Strong knowledge of HACCP, UAE municipality regulations, ISO standards, and food safety documentation.
  • HACCP Certification is mandatory.
  • Certified Professional in Food Safety (CP-FS) preferred.
  • Environmental Health & Safety certification is an advantage.
