Food Quality Controller vacancy at a leading Ice Creams and Frozzen Desserts company in Dubai UAE. The successful candidate will be responsible for maintaining the highest standards of food quality, food safety, and cold chain integrity within our cold storage facility handling ice cream, frozen desserts, bakery products, and temperature-sensitive raw materials.

This role is critical in ensuring that all incoming raw materials meet company specifications, food safety regulations, and HACCP requirements before entering production. The ideal candidate should possess strong knowledge of food quality control, cold chain management, GMP, HACCP, food microbiology, and frozen food storage practices.

Job Responsibilities

  • Conduct comprehensive inspections of all incoming raw materials, ingredients, packaging materials, and food additives.Verify supplier documentation, Certificates of Analysis (COA), delivery records, and quality certificates.
  • Measure and record product temperatures during receiving to ensure compliance with cold chain requirements.Inspect raw materials for physical, chemical, and microbiological quality parameters.
  • Ensure ingredients meet company specifications before approval for storage or production use.
  • Maintain accurate records of inspections, non-conformities, corrective actions, and other relevant quality documentation.
  • Support the QA team in conducting internal audits and hygiene inspections to ensure full compliance with regulatory requirements and customer specifications.
  • Coordinate with procurement, warehouse, and logistics teams to prevent quality deviations and ensure timely issue resolution.
  • Promote a strong food safety and hygiene culture among warehouse and handling staff through observation and corrective feedback.

  • Identify damaged, contaminated, expired, or non-compliant materials and take corrective action.

Cold Chain & Temperature Monitoring

  • Monitor freezer, chiller, and cold room temperatures throughout the day.
  • Ensure temperature records are accurately maintained and documented.
  • Verify compliance with established cold chain protocols during receiving, storage, and handling operations.
  • Investigate temperature deviations and implement corrective actions immediately.
  • Ensure frozen products remain within approved temperature ranges to maintain food safety and product quality.
  • Support calibration and verification of temperature monitoring equipment.

Inventory & Storage Management

  • Implement and enforce FIFO (First-In, First-Out) and FEFO (First-Expired, First-Out) inventory systems.
  • Conduct routine stock inspections to identify expired or near-expiry materials.
  • Ensure proper segregation of raw materials, allergens, packaging materials, and finished products.
  • Verify appropriate labeling, traceability, and storage conditions for all inventory.
  • Maintain organized cold storage facilities to prevent contamination and quality deterioration.

Food Safety, Hygiene & GMP Compliance

  • Enforce Good Manufacturing Practices (GMP), Good Hygiene Practices (GHP), and food safety procedures.
  • Monitor sanitation and cleaning activities within refrigerated and frozen storage areas.
  • Conduct hygiene inspections to ensure compliance with company standards and regulatory requirements.
  • Support HACCP implementation and verification activities.
  • Prevent cross-contamination risks through proper storage and handling controls.
  • Participate in food safety audits, internal inspections, and corrective action programs.

Non-Conformance & Corrective Actions

  • Identify, document, and report quality deviations and food safety risks.
  • Tag, isolate, quarantine, and reject non-conforming materials.
  • Investigate root causes of quality issues and recommend preventive measures.
  • Prepare Non-Conformance Reports (NCRs) and follow up on corrective actions.
  • Collaborate with procurement, warehouse, production, and quality teams to resolve quality concerns.

Documentation & Reporting

  • Maintain accurate quality control records, temperature logs, inspection reports, and compliance documentation.
  • Prepare daily, weekly, and monthly quality reports.
  • Ensure documentation complies with HACCP, ISO 22000, GMP, and food safety management system requirements.
  • Support regulatory inspections and third-party audits.

Job Qualifications

  • Bachelor’s Degree or Diploma in Food Science, Agriculture, or a related field.
  • 1–2 years of experience in a quality assurance or food inspection role, preferably in the frozen food produce or food distribution sector.
  • Sound knowledge of basic food safety principles, hygiene standards, and quality control procedures.
  • Familiarity with HACCP, ISO 22000, or similar food safety systems is an advantage.
  • Good observation skills and the ability to make quick decisions regarding product quality.


  • Proficiency in using basic tools for documentation and reporting (MS Excel, QC checklists, etc.).
  • Ability to work in cold storage environments and perform physical inspections.
  • Strong communication and teamwork skills.
  • Immediate availability is highly preferred.
