A leading fruit processing and food manufacturing company in the Dubai, UAE is looking for an experienced Online Quality Controller to join its quality and food safety team. The ideal candidate should have strong hands-on experience in food manufacturing, quality control, HACCP implementation, and UAE food safety regulations.

Job Responsibilities

  • Conduct routine quality inspections of raw materials, in-process products, and finished products.
  • Monitor food handling, processing, preparation, and storage activities to ensure compliance with GMP, HACCP, ISO 22000, and applicable UAE food safety requirements.
  • Perform organoleptic, chemical, and other quality checks according to product specifications.
  • Maintain accurate batch records, Certificates of Analysis (COAs), inspection records, test results, and quality documentation.
  • Operate, verify, and calibrate QC equipment including pH meters, weighing scales, thermometers, viscometers, and other relevant instruments.
  • Monitor product and storage temperatures and ensure temperature-control records are properly maintained.
  • Ensure compliance with HACCP plans, ISO 22000 requirements, company SOPs, product specifications, and Dubai Municipality food safety regulations.
  • Monitor CCPs and OPRPs and verify that required controls are properly implemented and documented.
  • Identify non-conformities and assist with root cause analysis, corrective actions, and preventive measures.
  • Conduct regular hygiene and sanitation inspections of production areas, equipment, tools, machinery, and delivery vehicles.
  • Perform line clearance and production readiness checks before production begins.
  • Conduct hourly quality inspections during production and packing operations.

  • Verify product weight, coding, labelling, sealing, packaging integrity, and overall product conformity.
  • Collect, identify, and retain production samples according to the company’s retention policy.
  • Ensure effective FIFO/FEFO practices for raw materials, packaging materials, and finished products.
  • Verify cleaning and sanitation activities before and after production.
  • Monitor allergen control and cross-contamination prevention measures.
  • Coordinate closely with production personnel to resolve quality issues and deviations in real time.
  • Assist with product trials, process validation, shelf-life studies, and continuous improvement initiatives.
  • Immediately report significant deviations and food safety concerns to QA/QC management.
  • Support product traceability exercises, mock recalls, and recall preparedness.
  • Monitor storage conditions of raw materials and finished products in warehouses, chillers, and freezers.
  • Verify the performance of metal detectors and other food safety control devices, where applicable.
  • Ensure non-conforming products are properly identified, segregated, and controlled.
  • Monitor employee personal hygiene, grooming, and food handling practices.
  • Monitor pest-control activities and appropriate waste-management practices.
  • Assist with internal, customer, regulatory, certification, and third-party audits.

Job Qualifications

  • Bachelor’s degree in Food Technology, Food Science, Microbiology, or a related field.
  • Minimum 5+ years of relevant experience in food manufacturing, preferably in quality control, quality assurance, or food hygiene.
  • Proven hands-on experience in a food manufacturing or processing environment is essential.
  • UAE food industry experience is strongly preferred.
  • Good knowledge of GMP, HACCP, ISO 22000, food safety systems, and UAE food regulations.
  • Familiarity with Dubai Municipality food safety requirements is highly desirable.
  • Practical experience with QC laboratory equipment and quality documentation.
  • Open to Males Only.
  • Strong analytical, problem-solving, inspection, and reporting skills.
  • Good communication and coordination skills with production and QA/QC teams.
  • Proficiency in quality documentation and data logging/reporting software.
  • Willingness to work in shift-based production operations.
  • Experience in shelf-life extension, fruit processing, and natural preservation techniques will be an added advantage.
