A leading bakery and food manufacturing company in the UAE is looking for a skilled and motivated Bakery Quality Assurance / Quality Control professional to join its production and quality team.
The ideal candidate should have hands-on bakery or food manufacturing experience, combined with strong knowledge of quality assurance, food safety, HACCP, GMP, hygiene, and quality control procedures. The successful candidate will be responsible for monitoring bakery production processes, inspecting raw materials and finished products, maintaining food safety standards, and supporting continuous quality improvement.

Job Responsibilities
- Monitor bakery production processes to ensure products consistently meet established quality, food safety, and customer requirements.
- Conduct quality checks at different stages of production, including raw material receiving, preparation, mixing, fermentation, baking, cooling, slicing, packaging, and storage.
- Inspect bakery products for appearance, texture, color, weight, size, taste, freshness, packaging integrity, and overall product quality.
- Verify that production activities comply with approved Standard Operating Procedures (SOPs), GMP, HACCP, food safety, and quality standards.
- Monitor critical control points and operational controls as defined within the company’s HACCP and food safety systems.
- Check incoming raw materials such as flour, yeast, sugar, fats, oils, dairy ingredients, eggs, additives, and other bakery ingredients against approved specifications.
- Ensure proper storage conditions, temperature control, stock rotation, FIFO/FEFO practices, and traceability of ingredients and finished products.
- Perform routine hygiene and sanitation inspections across bakery production areas, equipment, utensils, storage areas, and food-contact surfaces.
- Identify product defects, process deviations, non-conformities, and potential food safety risks and report them to the relevant department.
- Work closely with bakery production, food safety, warehouse, maintenance, and management teams to resolve quality issues.
- Assist in investigating customer complaints, product defects, deviations, and non-conforming products.
- Support root cause analysis and corrective and preventive actions (CAPA).
- Maintain accurate QA/QC records, inspection reports, checklists, monitoring forms, and other quality documentation.
- Conduct routine quality and hygiene audits and follow up on corrective actions.
- Monitor employee compliance with personal hygiene, protective clothing, handwashing, and food handling requirements.
- Assist with product sampling and coordinate laboratory testing where required.
- Verify product labeling and packaging compliance, including production dates, expiry dates, batch/lot numbers, storage instructions, and allergen information.
- Support product development and production trials by evaluating product quality, consistency, shelf life, and process performance.
- Assist in maintaining and improving the company’s Food Safety Management System and Quality Management System.
- Participate in internal audits, external audits, customer audits, and regulatory inspections when required.
- Ensure proper handling and documentation of rejected, damaged, expired, or non-conforming products.
- Promote a strong culture of food safety, product quality, hygiene, compliance, and continuous improvement.
Job Qualifications
- Bachelor’s degree in Food Science, Food Technology, Food Engineering, Microbiology, Biotechnology, or a related discipline.
- Candidates with a relevant Diploma in Food Technology, Bakery Technology, Food Science, or Quality Control may also be considered depending on experience.
- Practical experience in bakery production, food manufacturing, quality assurance, quality control, or food safety is highly desirable.
- Strong understanding of bakery processing and production operations.
- Knowledge of HACCP, GMP, food hygiene, food safety, quality control, and sanitation practices.
- Knowledge of food quality parameters and inspection procedures.
- Familiarity with food safety documentation, SOPs, quality records, traceability, non-conformance reporting, and corrective actions.

- Experience with bakery products such as bread, buns, rolls, cakes, pastries, cookies, biscuits, or other baked products will be an advantage.
- Knowledge of UAE food safety requirements and local regulatory requirements is preferred.
- HACCP, ISO 22000, Food Safety, Internal Auditor, or other relevant professional certifications will be an advantage.
- Good analytical, problem-solving, communication, and documentation skills.
- Ability to work in a fast-paced food production and bakery manufacturing environment.
- Strong attention to detail and commitment to food safety and product quality.

UAE Experience
Previous UAE food manufacturing or bakery industry experience will be an advantage. Candidates familiar with UAE food safety requirements, municipality inspections, HACCP-based food safety systems, and commercial bakery operations are encouraged to apply.
