Accor Properties in RAK, UAE is looking for a Hygiene and Quality Officer with the following:

Hygiene and Quality Officer will be responsible for implementing, monitoring, auditing, and reporting all quality, food safety, hygiene, and sustainability systems in line with Rixos Hotels UAE standards and local regulatory requirements.

Job Responsibilities

  • Conduct, monitor, and report quality assurance and food safety controls across all hotel departments.
  • Implement and ensure ongoing compliance with hotel quality, food safety, and sustainability management systems and certifications, including:
    • ISO 9001 (Quality Management Systems)
    • ISO 10002 (Customer Satisfaction & Complaints Handling)
    • ISO 14001 (Environmental Management Systems)
    • TS EN 15288:2 (Swimming Pool Safety & Hygiene)
    • ISO 22000 (Food Safety Management Systems)
    • GSTC (Global Sustainable Tourism Council standards)
    • IBCCES CAC (Certified Autism Center standards)
  • Ensure adherence to UAE local food safety laws, municipality guidelines, and hospitality regulations.
  • Participate in and support cross-internal audits conducted by the hotel group and external certification bodies.
  • Plan, conduct, and document supplier audits to verify food safety, hygiene, and quality compliance.
  • Manage laboratory sampling, coordinate testing, analyze results, and prepare detailed technical reports.
  • Identify non-conformities, recommend corrective and preventive actions (CAPA), and track closure effectiveness.
  • Conduct and document staff training programs related to quality management, food safety, hygiene, and sustainability awareness.
  • Maintain accurate records, reports, SOPs, and compliance documentation as per audit and certification requirements.
  • Support sustainability initiatives, waste reduction programs, and continuous improvement projects.
  • Carry out additional duties as assigned by the Quality & Sustainability Department.
  • Report directly to the Hotel Quality & Sustainability Manager.

Job Qualifications

  • Diploma or Bachelor’s degree in Food Engineering, Food Technology, Biotechnology, Microbiology, or a related discipline.
  • Minimum 2 years of experience working in 4-star or 5-star hotels within the UAE (mandatory).
  • Strong working knowledge of food safety systems, hygiene standards, ISO certifications, and hotel quality audits.
  • Familiarity with UAE food safety regulations and hospitality compliance requirements.
  • Excellent documentation, reporting, and communication skills.
  • Ability to conduct audits, trainings, and inspections independently.
