Seafood Technologist – Kerala vacnacy is responsible for ensuring the quality, safety, and regulatory compliance of seafood products across processing, storage, and distribution stages. This role requires strong expertise in food technology, seafood processing, and quality assurance to deliver safe, high-quality, and sustainable seafood products that meet domestic and international market standards.

Job Responsibilities
- Monitor daily seafood processing operations to ensure strict compliance with HACCP, ISO 22000, FSSAI, FDA, and EU seafood regulations.
- Conduct regular microbiological, chemical, and sensory analysis of raw materials, in-process samples, and finished seafood products.
- Verify hygiene practices, sanitation procedures, and personal hygiene standards across processing areas.
Processing & Product Development
- Optimize seafood processing techniques such as filleting, freezing, chilling, smoking, drying, marinating, and canning to maintain quality and safety.
- Implement advanced preservation methods to enhance shelf life, flavor, texture, and nutritional value of seafood products.
- Support new product development and value-added seafood product innovations aligned with market trends.
Traceability
- Implement and maintain raw material and finished product traceability systems in line with export and regulatory requirements.
- Prepare and maintain documentation for internal audits, third-party inspections, certifications, and export approvals.
- Ensure accurate record-keeping of CCP monitoring, laboratory test results, deviations, and corrective actions.
- Coordinate with government authorities, certification bodies, and inspection agencies for approvals, audits, and export clearances.
- Ensure compliance with seafood export requirements for EU, US, and other international markets.

- Promote sustainable seafood processing practices, responsible sourcing, and waste reduction initiatives.
- Train production, quality, and operations teams on food safety, hygiene, GMP, and best seafood handling practices.
- Support continuous improvement initiatives to enhance product quality and operational efficiency.
Job Qualifications
- Bachelor’s degree in Food Technology, Seafood Technology, Fisheries Science, Marine Biology, or a related discipline.
- Minimum 2 years of experience as a Seafood Technologist or in a seafood processing/quality control role (preferred).
- Hands-on experience in seafood manufacturing, processing plants, or export-oriented facilities is an advantage.
- Strong knowledge of HACCP, ISO standards, FSSAI regulations, FDA and EU seafood compliance.
- Experience in laboratory testing, quality audits, and seafood processing technologies.
- Good understanding of cold chain management and seafood preservation techniques.
