Restaurant and Hospitality Catering Chain in Dubai, UAE is looking for a Food Quality Controller Junior with the following experience in FSMS, Food Watch Programs, Food Safety Training etc.

Job Responsibilities

Food Safety & FSMS Implementation

  • Maintain and oversee the Food Safety Management System (FSMS) in the Restaurant for the CPU, ensuring it aligns with local regulations and company standards.
  • Conduct daily inspections across production, storage, and dispatch areas to verify compliance with hygiene and food safety protocols.
  • Monitor food safety records and verify that all log sheets are completed accurately and on time.

Quality Control & Product Evaluation

  • Inspect semi-finished and finished products before dispatch to outlets; report, correct, and document any deviations.
  • Manage product sampling and schedule microbiological and organoleptic tests. Analyze laboratory reports and initiate corrective measures when required.
  • Ensure full traceability of all raw materials and finished goods.

Complaint & Incident Management

  • Handle customer and outlet complaints related to food quality or safety. Investigate root causes, prepare detailed reports, and update the complaint tracking sheet.
  • Coordinate with relevant departments to implement timely corrective and preventive actions to avoid recurrence.

Vendor, Service & Maintenance Coordination

  • Liaise with external service providers of the Restaurant (pest control, grease trap cleaning, kitchen hood cleaning, etc.) and ensure timely and effective service delivery.
  • Identify and escalate maintenance issues via email to the concerned facility and maintenance team.
  • Much of your daily documentation (inspections, product checks, transport audits, traceability logs) will be required to tie into FoodWatch.
  • When you manage or oversee food safety / quality, you’ll need to ensure your team is fulfilling data-entry, logging, corrective actions via the system.
  • During audits (internal, regulatory or third-party), FoodWatch records may be reviewed — so you’ll be responsible for ensuring compliance and accuracy.
  • The platform’s traceability feature will impact how you manage suppliers, finished product dispatch, semi-finished product tracking, and food transport compliance.

Audit Preparation & Compliance

  • Attend internal and third-party audits and assist the team in preparing Corrective Action Reports (CARs).
  • Ensure active use of the Dubai Food Watch system and verify that Certified PICs (Person In Charge) conduct inspections and update digital records regularly.

Training & Staff Awareness

  • Conduct quarterly refresher training sessions and toolbox talks for production, hygiene, and service staff on food safety and hygiene practices.
  • Provide on-the-spot guidance to staff to ensure adherence to food handling and sanitation standards.

Sanitation & Hygiene Monitoring

  • Supervise and verify daily cleaning activities within the CPU and guide the cleaning supervisor to maintain high hygiene levels.
  • Monitor food transportation practices and ensure vehicles meet food safety and temperature control standards.

Documentation & Continuous Improvement

  • Draft and update checklists, SOPs (Standard Operating Procedures), and policies in line with regulatory and operational requirements.
  • Suggest and support continuous improvement projects to enhance quality, efficiency, and food safety performance.
