cccc vacancy in Kerala – A Restaurant chain Kerala, India is looking for a Food Quality Controller with the following:

Job Responsibilities

  • Ensure Daily Food Safety Compliance:
    Oversee and verify that all food handling, preparation, and service operations meet company hygiene standards and FSSAI food safety requirements. Conduct daily checks in kitchen, service, and storage areas to ensure compliance.
  • Conduct Internal Audits and Hygiene Inspections:
    Perform regular food safety and hygiene audits across the outlet to identify risks, non-conformities, and improvement areas. Ensure corrective and preventive actions (CAPA) are implemented promptly.
  • Monitor Food Handling and Storage:
    Supervise the receiving, storage, and preparation of raw materials, semi-prepared foods, and finished products. Ensure temperature monitoring, labeling, and FIFO (First-In, First-Out) principles are strictly followed.
  • Maintain Food Safety Documentation:
    Accurately maintain all checklists, temperature logs, cleaning records, pest control reports, and staff hygiene checklists as per company SOPs and FSSAI regulations.
  • Verify Sanitation and Cleaning Procedures:
    Monitor and verify cleaning schedules, chemical usage, and sanitation procedures in food preparation and service areas. Ensure that cleaning materials are used correctly and safely.
  • Oversee Waste Management and Pest Control:
    Ensure waste segregation, disposal, and pest control activities are conducted as per hygiene and environmental standards. Keep proper documentation for verification.
  • Train and Educate Outlet Staff:
    Conduct regular food safety and hygiene training sessions for kitchen and service employees, emphasizing personal hygiene, food handling, cleaning procedures, and cross-contamination prevention.
    Deliver training effectively in Hindi, ensuring all staff understand food safety expectations and standards.

  • Implement Corrective Actions:
    Identify and report any food safety deviations, unsafe practices, or product quality issues. Support management in investigating root causes and implementing corrective and preventive measures.
  • Ensure Temperature and Product Quality Control:
    Monitor and record the temperature of chillers, freezers, and hot-holding units. Verify that all food items are stored and displayed under safe temperature conditions.
  • Support Outlet Operations:
    Coordinate with outlet managers, chefs, and service teams to ensure seamless implementation of food safety procedures without disrupting operations. Provide on-ground guidance to maintain product quality and safety.

Job Qualifications

  • Education:
    Bachelor’s Degree or Diploma in any of the following fields:
    • Food Science, Microbiology, or Chemistry
    • Hotel Management (preferably with a focus on Food Safety or Quality Control)
    • Diploma in Food Safety or Industrial Hygiene
    • Any other food-related discipline recognized by FSSAI
  • Certifications (Preferred):
    • FSSAI-approved Food Safety Supervisor Training certification
    • HACCP / ISO 22000 training or awareness certification will be an added advantage
  • Experience:
    • 0–2 years of experience in food safety, quality control, or hygiene supervision (fresh graduates will also be considered).
    • Experience working in restaurants, cafes, catering outlets, or food manufacturing facilities is preferred.
  • Knowledge and Skills:
    • Sound understanding of FSSAI standards, HACCP principles, GMP, and GHP requirements.
    • Strong observational and auditing skills with attention to detail.
    • Ability to identify potential food safety risks and implement corrective measures.
    • Excellent record-keeping and documentation skills.
    • Proficiency in monitoring temperature, handling checklists, and maintaining hygiene logs.
    • Ability to train and motivate staff at different levels.
  • Language Proficiency:
    • Must be fluent in Hindi (essential for staff communication and training).
    • Working knowledge of Malayalam and English is preferred.
  • Personal Attributes:
    • Responsible, proactive, and disciplined in maintaining hygiene standards.
    • Strong communication and leadership skills to manage outlet-level hygiene teams.
    • Physically fit and able to work in a fast-paced food service environment.
    • Willingness to travel across outlets within Kerala if required.
