Quality Assurance Executive vacancy at Ernakulam, Kerala, India, will be responsible for ensuring food safety, product quality, and regulatory compliance across bakery manufacturing operations. This role focuses on implementing and maintaining food safety management systems, monitoring production hygiene, conducting audits, and ensuring compliance with ISO 22000, HACCP, GMP, and GHP standards to deliver safe and high-quality bakery products.

Responsibilities

  • Implement, monitor, and maintain Food Safety Management Systems (FSMS) in line with ISO 22000, HACCP, GMP, and GHP requirements.
  • Conduct quality checks and inspections on raw materials, in-process products, and finished bakery products to ensure compliance with defined specifications.

  • Monitor bakery production processes, including mixing, baking, cooling, slicing, and packaging, to ensure consistent product quality.
  • Ensure strict adherence to personal hygiene, sanitation, and cleaning procedures across the production facility.
  • Maintain and verify critical control points (CCPs), temperature controls, and allergen management practices.
  • Conduct internal audits, support external audits, and ensure timely closure of non-conformances.
  • Prepare, review, and maintain quality documentation, SOPs, records, checklists, and reports as per food safety standards.
  • Investigate customer complaints, quality deviations, and non-conformities, perform root cause analysis, and implement corrective and preventive actions (CAPA).
  • Coordinate with production, stores, and maintenance teams to improve quality performance and compliance.
  • Ensure compliance with statutory, regulatory, and customer requirements related to food safety and bakery manufacturing.

Job Qualifications

  • Degree or Diploma in Food Technology, Food Science, Microbiology, or a related discipline.
  • 2–3 years of hands-on experience in bakery manufacturing or food production quality assurance.
  • Strong working knowledge of ISO 22000, HACCP, GMP, and GHP standards.
  • Experience handling internal and external food safety audits.
  • Understanding of bakery processes, ingredients, shelf-life control, and quality parameters.

  • Ability to maintain accurate quality records and documentation.
  • Knowledge of food safety regulations and compliance requirements applicable to food manufacturing units.
  • Good analytical, problem-solving, and communication skills.
  • Ability to work independently as well as collaboratively with cross-functional teams.
