A Five-Star rated Hotel in Dubai is seeking a highly skilled and detail-oriented Hygiene Officer to ensure the highest standards of food safety, hygiene, and sanitation across all hotel operations. The ideal candidate will play a key role in maintaining compliance with local health authority regulations, international hygiene standards, and Radisson’s Hotel brand quality requirements. This position is critical in safeguarding guest health, enhancing operational excellence, and supporting a culture of food safety and cleanliness throughout the property.

Responsibilities

Hygiene Management

  • Develop, implement, and continuously improve hygiene policies, procedures, and standard operating procedures (SOPs).
  • Monitor and enforce compliance with hotel hygiene standards, Dubai Municipality regulations, and international best practices.
  • Conduct routine and surprise hygiene inspections and internal audits across kitchens, food & beverage outlets, guest rooms, stores, and public areas.
  • Ensure all hygiene and sanitation practices align with HACCP, ISO 22000, and hospitality industry standards.

Training & Staff Development

  • Deliver comprehensive hygiene and food safety training for new hires and existing team members.
  • Organize regular refresher training sessions, workshops, and toolbox talks to strengthen hygiene awareness.
  • Prepare training materials, manuals, checklists, and visual aids related to hygiene and sanitation practices.
  • Evaluate staff hygiene performance and recommend corrective actions or retraining where required.

Food Safety & Quality Control

  • Monitor food handling, storage, preparation, and service practices across all food and beverage operations.
  • Ensure proper cleaning, sanitation, and maintenance of kitchen equipment, utensils, and food contact surfaces.
  • Supervise pest control programs and coordinate with approved pest control service providers.
  • Identify hygiene risks and proactively implement preventive and corrective measures.

Reporting & Documentation

  • Maintain accurate records of hygiene inspections, audits, training sessions, and corrective actions.
  • Prepare detailed hygiene, food safety, and compliance reports for hotel management.
  • Track non-conformities and ensure timely closure of corrective and preventive actions (CAPA).

Compliance & Health & Safety

  • Ensure full compliance with UAE health, food safety, and occupational safety regulations.
  • Work closely with the Health & Safety team to assess and mitigate hygiene-related hazards and risks.
  • Participate in health and safety committee meetings, internal audits, and continuous improvement initiatives.

  • Respond professionally to guest inquiries, feedback, or concerns related to hygiene and cleanliness.
  • Support guest confidence and satisfaction by maintaining consistently high hygiene standards across the hotel.

Qualifications

  • Bachelor’s degree in Food Science, Environmental Health, Public Health, or a related discipline.
  • Certification in HACCP and/or ISO 22000 (mandatory).
  • Minimum 2 years of experience in a Hygiene Officer or Food Safety role within the hospitality or Radisson hotel industry.
  • Strong understanding of Dubai Municipality food safety regulations and international hygiene standards.
  • Excellent communication, training, and interpersonal skills.
  • High attention to detail with strong organizational and documentation abilities.
  • Ability to work independently while collaborating effectively with cross-functional teams.
  • Proficiency in Microsoft Office (Word, Excel, PowerPoint) and relevant reporting tools.
