Hygiene Officer vacancy at a leading Hotel and Hospitality Chain in Sharjah, UAE with the following Food Safety or Food Tech expertise in the Hotel Industry:
Job Responsibilities
- Implement and monitor hotel hygiene standards in line with Sharjah Municipality regulations, UAE Food Code, and internal food safety policies.
- Conduct daily hygiene inspections across kitchen areas, food preparation sections, storage rooms, receiving area, staff cafeteria, and housekeeping departments.
- Ensure compliance with HACCP, GMP, and ISO 22000 guidelines throughout all food handling and service operations.
- Monitor temperature control for chillers, freezers, hot holding units, and all food deliveries using calibrated equipment.
- Verify personal hygiene practices of all food handlers, including uniform cleanliness, hand hygiene, grooming, and PPE usage.
- Inspect supplier deliveries to ensure safe raw materials, proper temperature, packaging condition, and documented traceability.
- Conduct regular training for kitchen, stewarding, and service staff on hygiene standards, cross-contamination prevention, allergen control, waste management, and cleaning procedures.
- Maintain sanitation schedules for kitchen equipment, exhaust hoods, cold rooms, and food storage areas, ensuring timely cleaning and disinfection.
- Review pest control activities and coordinate with external contractors; monitor traps, logs, and corrective actions.
- Investigate food safety incidents such as customer complaints, suspected foodborne illness, or non-conformities and prepare corrective/preventive action reports.
- Maintain accurate documentation including checklists, cleaning logs, temperature monitoring sheets, staff hygiene records, and audit reports.
- Assist in municipality inspections and ensure timely closure of all hygiene-related non-compliances.
- Support kitchen operations by guiding chefs and staff on best hygiene practices and safe food handling.
Job Qualifications
- Bachelor’s Degree or Diploma in Food Safety, Food Technology, Hotel Management, Microbiology, or related field.
- Minimum 1–2 years of experience as a Hygiene Officer or Food Safety Assistant in a hotel, restaurant, or catering environment.
- Strong knowledge of UAE Food Code, Sharjah Municipality requirements, HACCP, ISO 22000, and food hygiene best practices.
- HACCP Level 3 / PIC Certification (preferably PIC Level 3) is highly desirable.
- Experience in kitchen inspections, temperature monitoring, sanitation procedures, and food safety audits.
- Familiarity with pest control management, waste handling, and chemical safety.
- Good communication skills to train staff and coordinate with chefs, engineering, and external vendors.
- Strong documentation and reporting skills using checklists, hygiene logs, and digital systems.
- Attention to detail, proactive mindset, and the ability to identify hygiene gaps and recommend improvements.
- Ability to work flexible hours, including weekends or shifts, depending on hotel operations.
