Hospitality Management and luxury hotel group in Abu Dhabi, UAE, looking for a Hygiene Officer to ensure all hygiene, sanitation, and food safety standards are strictly adhered to across our culinary and service operations. The ideal candidate will play a crucial role in implementing HACCP and FSMS procedures, conducting inspections, and promoting a culture of hygiene excellence within the hotel.

Job Responsibilities

  • HACCP & FSMS Compliance
    • Monitor the implementation of the HACCP program and ensure all documentation, checklists, and corrective actions are updated accurately.
    • Oversee Food Safety Management System (FSMS) procedures and verify proper maintenance of logs, traceability records, temperature charts, and internal audits.
  • Food Safety Monitoring & Inspections
    • Conduct daily hygiene inspections in receiving areas, kitchens, storage rooms, and food service outlets.
    • Inspect raw materials, food preparation areas, and cooked products to ensure compliance with food safety standards.
    • Collect food, water, and surface swab samples for microbiological testing and coordinate corrective actions based on results.
  • Incident Handling & Corrective Actions
    • Identify non-compliances and immediately stop any operations that pose food safety risks in Hospitality Management.
    • Investigate hygiene-related issues and implement preventive and corrective measures in coordination with the culinary and stewarding teams.
  • Documentation & Reporting
    • Maintain detailed records of inspections, non-conformities, pest control activities, disinfection schedules, and staff hygiene compliance.
    • Prepare and submit weekly and monthly hygiene reports and audit summaries to management.
  • Training & SOP Development
    • Assist in the development, review, and updating of HACCP plans, SOPs, and hygiene policies.
    • Conduct food safety and personal hygiene training sessions for culinary, service, and stewarding staff.

Job Qualifications

  • Education
    • Bachelor’s degree in Food Science, Public Health, Microbiology, Environmental Health, or a related discipline.
  • Certifications
    • Valid Food Safety Certification (Level 2–4) approved by local authorities.
    • HACCP certification or equivalent training in food safety systems.
  • Experience
    • 2–5 years of experience in food safety or hygiene roles, with at least 1–2 years in a 5-star hotel or luxury hospitality environment.
    • Strong hands-on experience in HACCP implementation, FSMS audits, and hygiene inspections.
  • Skills & Competencies
    • Excellent knowledge of UAE food safety regulations, HACCP principles, ISO 22000, and local Municipality guidelines.
    • Strong observational skills, attention to detail, and ability to identify hygiene risks quickly.
    • Effective communication, report-writing, and supervisory skills to guide kitchen and service teams.
    • Proficient in MS Office (Word, Excel, PowerPoint) and digital documentation systems.
