Hospitality and Tourism Management Industry in Dubai is looking for a Food Safety Manager – Hospitality to lead and govern food safety systems across multi-site restaurant operations. This role is responsible for HACCP compliance, audit management, Dubai Municipality coordination, and continuous food safety improvement, ensuring all locations consistently meet local regulatory requirements, HACCP accreditation standards, and company policies.

The ideal candidate brings strong technical food safety knowledge, hands-on Hospitality and Tourism Management experience, and the ability to translate regulatory requirements into practical, day-to-day operational practices.

Job Responsibilities

HACCP Compliance & Food Safety Oversight

  • Ensure full HACCP compliance across all restaurants and hospitality outlets in multiple regions.
  • Conduct regular internal food safety audits, inspections, and compliance checks to verify adherence to HACCP plans and company standards.
  • Monitor Critical Control Points (CCPs) and validate that corrective actions are implemented effectively.
  • Identify non-conformities and drive Corrective and Preventive Actions (CAPA) in coordination with Operations and Training teams.
  • Ensure food safety records, logs, and reports are accurate, complete, and audit-ready at all times.

HACCP Manuals, Policies & SOP Management

  • Review, update, and maintain HACCP manuals, Standard Operating Procedures (SOPs), food safety policies, and work instructions.
  • Align documentation with operational realities, regulatory updates, and hospitality best practices.
  • Develop and implement new or revised food safety procedures to improve compliance and efficiency.
  • Collaborate with Training teams to integrate updated food safety content into onboarding programs and refresher training.

Audit Preparation & Accreditation Management

  • Act as the primary point of contact with the HACCP accreditation body and external auditors.
  • Plan, coordinate, and lead annual surveillance audits across all restaurant locations.
  • Conduct pre-audit readiness assessments, documentation reviews, and on-site coaching.
  • Lead post-audit follow-ups, ensuring timely closure of findings and driving continuous improvement initiatives.

Dubai Food Watch (DFW) Training Centre Management

  • Manage the company’s Training Centre profile on the Dubai Food Watch (DFW) platform.
  • Ensure compliance with Dubai Municipality Food Control Department requirements.
  • Maintain accurate trainer registrations, course approvals, certifications, and renewal records within the DFW system.
  • Coordinate with internal stakeholders to ensure all food handlers complete mandatory DFW-linked training and renewals.

Cross-Functional & Stakeholder Collaboration

  • Partner with Operations teams to embed food safety practices into daily workflows and service standards.
  • Collaborate with Procurement and Supply Chain to ensure supplier food safety compliance and traceability.
  • Support New Store Openings (NSOs) by implementing food safety systems from pre-opening stage.
  • Provide food safety guidance and compliance support to franchisees, restaurant managers, and internal teams.

Training, Coaching & Food Safety Culture

  • Deliver structured HACCP, hygiene, and food safety training sessions for operational teams.
  • Coach restaurant leadership teams to build a strong food safety culture and accountability mindset.
  • Develop practical tools such as checklists, guides, and monitoring formats to simplify compliance.

Regulatory & Industry Compliance

  • Stay updated on UAE and G.C.C. food safety regulations, municipal requirements, and industry trends.
  • Ensure all locations meet or exceed local authority, hospitality, and food safety standards.
  • Maintain professional relationships with regulatory bodies, auditors, and accreditation agencies.
  • High level of integrity, professionalism, and commitment to guest and brand safety.

Qualifications

  • Bachelor’s degree in Food Science, Microbiology, Public Health, or a related discipline.
  • HACCP Level 4 Certification (mandatory).
  • Lead Auditor certification is highly preferred.
  • Minimum 5–7 years of experience in Food Safety, Quality Assurance, or FSMS within the hospitality or F&B sector.
  • Proven experience managing multi-site restaurant or hospitality operations.
  • Strong working knowledge of G.C.C. food safety regulations, HACCP accreditation processes, and Dubai Food Watch systems.
  • Excellent communication, training delivery, and stakeholder management skills.
  • Highly organized, analytical, and capable of working independently across diverse locations.
