HACCP Manager vacancy at Abu Dhabi, UAE – to oversee food safety and hygiene operations for an upcoming luxury hotel and hospitality establishment. The role is responsible for implementing and monitoring the Hazard Analysis and Critical Control Points (HACCP) system to ensure compliance with international food safety standards and local regulations. The HACCP Manager will play a vital role in protecting guest health, maintaining brand reputation, and ensuring that all hotel kitchens, restaurants, and catering outlets deliver safe, high-quality food.
This position is suited for professionals with strong expertise in food safety management, quality assurance, and hospitality operations.
Job Responsibilities – HACCP Manager
- Develop, implement, and manage the HACCP food safety management system across hotel kitchens, restaurants, and catering services.
- Ensure compliance with local food safety regulations, international standards, and hospitality industry requirements.
- Conduct regular food safety audits, inspections, and risk assessments to identify and control potential hazards.
- Provide training and guidance to culinary and service staff on HACCP principles, hygiene practices, and food handling procedures.

- Monitor food preparation, storage, and distribution processes to prevent contamination and maintain safety standards.
- Maintain accurate and up-to-date documentation of food safety records, reports, and compliance findings.
- Coordinate with hotel management, operations, and HSE teams to drive continuous improvement in food safety culture.
- Lead corrective and preventive actions (CAPA) for any non-conformities identified during inspections or audits.
- Support hotel operations during government inspections, third-party audits, and certification processes.
- Promote best practices in food hygiene, sanitation, and guest safety throughout the hospitality operations.
Job Qualifications
- Bachelor’s degree in Food Technology, Food Science, Microbiology, Hospitality Management, or a related discipline.
- Professional certification in HACCP, ISO 22000, or Food Safety Management Systems.
- Minimum of 3 to 5 years of proven experience in food safety and HACCP management within hotels, resorts, or the hospitality sector.
- Strong knowledge of food safety standards, HACCP principles, and hospitality food and beverage operations.
- Experience in conducting audits, risk analysis, and employee training in food safety.
- Excellent leadership, communication, and organizational skills with the ability to influence and maintain a culture of food safety.
- Familiarity with local food safety laws, Dubai Municipality standards, and international hospitality regulations is an advantage.
