Food Technologist – Meat Industry opportunity in Bengaluru to lead end-to-end product development for innovative, high-quality processed meat products. The role involves translating consumer insights into scalable, compliant, and commercially successful products while ensuring the highest standards of food safety, quality, sensory performance, and regulatory compliance.

This position is ideal for professionals with strong expertise in meat processing technologies, functional ingredients, product renovation, and industrial scale-up within D2C, FMCG, QSR, or B2B food environments.

Job Responsibilities

  • Lead the complete new product development (NPD) lifecycle, from concept ideation to commercial launch, including bench prototyping, pilot trials, sensory evaluation, shelf-life validation, plant trials, and scale-up.
  • Develop differentiated processed and value-added meat products aligned with evolving consumer trends, nutrition goals, and market demands.
  • Prepare and maintain detailed product documentation, formulations, SOPs, and technical specifications to support regulatory and operational requirements.
  • Work closely with marketing, supply chain, operations, sales, chefs, and external manufacturing partners (CMOs) to convert consumer insights into commercially viable D2C and retail products.
  • Communicate product innovation stories clearly, supporting brand positioning and go-to-market strategies.
  • Renovate and optimize existing meat product lines to improve taste, texture, nutritional profile, shelf-life, yield, and cost efficiency without compromising quality.
  • Ensure strict compliance with FSSAI regulations, HACCP, GMP, and global food safety standards during product improvement initiatives.

Processing & Packaging Expertise

  • Apply strong technical knowledge of meat processing and preservation technologies, including vacuum packing, pasteurisation, retort processing, IQF, hot-fill, chilled and frozen processing, and Modified Atmosphere Packaging (MAP).
  • Recommend suitable processing methods and packaging formats to achieve optimal product stability, safety, and sensory performance.

Supplier & Technology Management

  • Partner with ingredient suppliers for ingredient trials, functional ingredient evaluation, new processing technologies, and cost optimization initiatives.
  • Assess raw materials, additives, seasonings, proteins, stabilizers, and functional ingredients for performance, compliance, and scalability.

Sensory & Market Insights

  • Conduct structured sensory evaluations, consumer testing, and internal tasting panels to gather actionable product feedback.
  • Stay updated on global savory, meat, and alternative protein trends, adapting relevant innovations for Indian consumer preferences.
  • Work closely with manufacturing partners and co-packers to troubleshoot process challenges, optimize yields, and ensure consistent quality during scale-up and commercialization.

Job Qualifications

  • B.Tech / M.Tech in Food Technology, Food Science, Food Engineering, or a closely related discipline.
  • 4–7 years of hands-on experience in R&D or retort processing, product development within processed foods, meat processing, FMCG, D2C brands, QSR, B2B ingredients, or food manufacturing.
  • Prior experience with processed meat products like deli meats, bratwurst sausage, brisket, and red meat is strongly preferred.
  • Strong formulation experience with functional ingredients, including:
    • Proteins
    • Hydrocolloids
    • Stabilizers
    • Fats & oils
    • Seasonings and flavors
  • In-depth understanding of meat processing technologies, shelf-stable and cold-chain products.
  • Knowledge of food packaging systems, including vacuum packs, MAP, retort pouches, and frozen packaging.
  • Solid working knowledge of FSSAI regulations, HACCP, GMP, and food safety documentation.

Food Technologist
