Hiring for an experienced Food Technologist in Dubai to support inflight catering operations, Halal food compliance, and airline meal product development. This role is ideal for professionals with strong expertise in food technology, recipe development, airline catering, cook-chill production, and high-altitude food service.

Job Responsibilities

Provide specialist technical support for product and process design, ensuring full compliance with Halal food standards, Emirates quality systems, and aviation food safety requirements, in collaboration with the Food Safety & Halal Compliance team.

Work closely with chefs, culinary development teams, and concept designers to apply food science and sensory evaluation techniques, assessing and optimizing taste, aroma, texture, appearance, and consistency of inflight meals.

Design, develop, and validate food production processes to ensure recipe integrity, food safety, and quality consistency during large-scale manufacturing, cook-chill operations, reheating, and high-altitude inflight service.

Develop and maintain accurate technical documentation and product specifications, including standardized recipes, preparation methods, ingredient measurements, allergen information, critical control points (CCPs), and process validation records to meet regulatory, Halal, and airline compliance standards.

Evaluate, test, and recommend ingredient alternatives based on technical suitability, innovation potential, sustainability goals, cost efficiency, and supply chain feasibility, supporting informed commercial and operational decision-making.

Partner with the Concept Development and Production teams to conduct first batch trials and pilot productions, monitor production line performance, identify deviations, and drive process optimization and continuous improvement.

Analyse production data, quality trends, and sensory feedback to improve menu performance, waste reduction, and operational efficiency across airline catering facilities.

Support training and capability development of culinary, production, and quality teams by delivering food safety, process control, and compliance training aligned with international regulations and Halal standards.

Stay current with food technology innovations, airline catering trends, Halal requirements, and global food safety regulations, ensuring best practices are embedded in product development and operations.

Job Qualifications Food Technologist Dubai

  • Bachelor’s Degree or Honours (12+3 or equivalent) in Food Technology, Food Science, or a related discipline.
  • Minimum 5 years of experience in inflight catering or airline food service operations, with strong exposure to aviation catering environments.
  • Proven experience in recipe development, recipe standardisation, and demand planning systems, using tools such as SAP, SpecPage, Nutritics, ESHA Genesis, ChefTec, Apicbase, MasterCook, ReciPal, ComBase Predictor, SAFEFOOD 360, TA.XTPlus, CompuSense, EyeQuestion, and LIMS.
  • Strong knowledge of commercial catering, institutional food production, menu management, cook-chill technology, high-volume food manufacturing, and altitude-based reheating constraints for inflight meals.
  • Hands-on experience in hospitality or food service operations, preferably aviation or inflight catering, with the ability to work across data-driven systems and practical culinary environments.
  • Excellent communication, stakeholder management, and cross-functional collaboration skills, supported by strong organisational and project management abilities.
