Food Technologist – Bakery -A Bakery Product Manufacturing Unit in Dubai UAE, is looking for a Food Technologist with the following:,

Job Responsibilities

  1. Product Development:
    • Formulate new bakery products (bread, cakes, pastries, etc.) in alignment with market trends and customer preferences.
    • Conduct R&D trials for recipe improvements, shelf life extension, and nutritional enhancement.
    • Coordinate pilot runs and scale-up of recipes from lab to production line.
  2. Quality Assurance and Control:
    • Monitor raw materials, work-in-progress, and finished products to ensure adherence to quality and food safety standards.
    • Validate sensory, physical, and chemical parameters for all bakery products.
    • Assist in root cause analysis and corrective actions for quality-related issues.
  3. Process Optimization:
    • Evaluate and improve baking processes, mixing times, fermentation, proofing, baking, and cooling parameters for consistency and efficiency.
    • Recommend adjustments in equipment or ingredient usage to improve product quality and reduce waste.

  1. Documentation and Compliance:
    • Maintain accurate records of product specifications, SOPs, and testing reports.
    • Ensure compliance with local (UAE/Sharjah Municipality), GCC, and international food safety regulations including HACCP, GMP, and ISO standards.
  2. Cross-functional Collaboration:
    • Work with procurement to evaluate new ingredients and suppliers.
    • Coordinate with production and QA teams for smooth product rollouts.
    • Support marketing with technical inputs and product claims.
  3. Training and Auditing:
    • Provide training to production staff on new processes, quality protocols, and hygiene standards.
    • Participate in internal and external audits as a food technology representative.

Job Qualifications -Food Technologist – Bakery

  • Education:
    Bachelor’s or Master’s degree in Food Technology, Food Science, Bakery Science, or a related field.
  • Experience:
    Minimum 2–4 years of hands-on experience in a bakery or food manufacturing environment in a similar role.
  • Technical Skills:
    • Sound knowledge of bakery ingredients (flour, improvers, yeast, emulsifiers, etc.) and their functionalities.
    • Familiarity with industrial bakery equipment and production lines.
    • Proficient in shelf life studies, sensory evaluation, and food lab testing methods.
  • Regulatory Knowledge:
    • Practical understanding of HACCP, GMP, ISO 22000, and local UAE food safety laws.
  • Soft Skills:
    • Strong problem-solving and analytical thinking.
    • Excellent communication and teamwork skills.
    • Attention to detail and documentation.
  • Language:
    Proficiency in English is mandatory; knowledge of Arabic or Hindi is an advantage.
