Food Safety Supervisor for a leading chain of restaurants for multiple locations across Kerala, India.To oversee food hygiene, sanitation, and regulatory compliance across restaurant outlets in Kerala. This role is ideal for fresh graduates and entry-level professionals who are passionate about food safety management, HACCP implementation, and hygiene compliance in the hospitality industry.
The Food Safety Supervisor will ensure that all kitchen operations strictly follow FSSAI guidelines, food safety standards, and internal SOPs, maintaining the highest standards of food quality and consumer safety.
Job Responsibilities
- Monitor daily food safety and hygiene practices in kitchen, storage, and service areas.
- Ensure compliance with FSSAI regulations, HACCP principles, and company food safety policies.
- Conduct routine hygiene inspections and internal food safety audits.
- Identify non-conformities and implement corrective and preventive actions (CAPA).
- Supervise receiving, inspection, and approval of raw materials and ingredients.
- Ensure proper food storage practices, including FIFO (First In, First Out) and FEFO methods.
- Monitor temperature control of refrigerators, freezers, and hot holding units.
- Verify correct labeling, date coding, and segregation of raw and cooked food.
- Maintain food safety checklists, temperature logs, cleaning schedules, and audit records.
- Update documentation as per internal SOPs and regulatory requirements.
- Assist during external inspections and regulatory audits.
Training & Staff Development
- Conduct food safety and personal hygiene training sessions for kitchen and service staff.
- Deliver training programs in Hindi to ensure effective communication with North Indian staff.
- Reinforce handwashing procedures, safe food handling, and cross-contamination prevention practices.
Sanitation & Pest Control Monitoring
- Monitor chemical usage, cleaning procedures, and sanitation standards.
- Oversee pest control activities and ensure proper waste management practices.
- Ensure cleaning schedules are strictly followed and documented.
- Work closely with chefs, kitchen supervisors, and outlet managers to implement food safety systems.
- Promote a strong food safety culture across all restaurant operations.
Job Qualifications
Candidates must hold a Bachelor’s Degree or Diploma in any of the following disciplines:
- B.Sc. / M.Sc. in Food Science, Microbiology, or Chemistry
- Hotel Management (with Food Safety specialization)
- Diploma in Food Safety or Industrial Hygiene
- Any Food Safety and Standards Authority of India (FSSAI)-recognized Food Safety Training Certification (Preferred)
- Knowledge of HACCP, GMP, and food safety management systems
- Strong understanding of FSSAI food safety regulations
- Good documentation and reporting skills
- Ability to conduct internal audits and inspections
- Strong communication and training skills
- Attention to detail and problem-solving ability
