JW Marriott Dubai is hiring a Food Safety Supervisor – for Dubai UAE – with the following PIC in charge capacities and the following Hospitality Industry experience:
Job Responsibilities
- Assist the Director of Food Safety & Environmental Services and Food Safety Manager in preparing training materials, information boards, newsletters, and awareness posters.
 - Perform daily walkthroughs to identify non-compliances, document findings, and report through the correct channels.
 - Ensure Marriott Global Food Safety Standards (43-point checklist) and Dubai Food Code requirements are consistently followed.
 
- Conduct regular inspections of all food handling areas, including kitchens, bars, in-room amenities, and staff practices, ensuring compliance with sanitation and hygiene standards.
 - Monitor cleanliness and disinfection activities daily and coordinate with stewarding for corrective actions.
 - Enforce policies ensuring that sick food handlers or service staff do not prepare or serve food.
 - Inspect and evaluate food safety risks in purchasing, receiving, storage, preparation, and service of food and beverages.
 
- Perform monthly food sampling and support laboratory testing requirements.
 - Record and analyze guest and supplier complaints related to food safety and provide reports for corrective actions.
 - Support and participate in scheduled trial runs, audits, and inspections.
 - Maintain and review kitchen logs for food safety program compliance (A1, A2, A3, etc.).
 - Monitor temperature control systems, appliances, drains, fans, and storage facilities to ensure proper operation, reporting any issues immediately.
 
- Ensure compliance with food handling policies, including FIFO (First In, First Out), labeling, rotation, and Cold Chain standards.
 - Provide feedback to management on daily and long-term hygiene and food safety issues.
 - Follow and enforce personal hygiene practices, including proper use of PPE, hand hygiene, and safe work attire.
 - Support PIC (Person in Charge) requirements and other Dubai Municipality food safety initiatives.
 - Assist with administrative duties and support food safety projects as required.
 
Job Qualifications
- Minimum 2–4 years of experience in food safety, hygiene, or quality control, preferably in the hospitality, catering, or food & beverage industry.
 - Strong knowledge of Dubai Food Code, HACCP principles, and Marriott Global Food Safety Standards.
 - Bachelor’s degree or diploma in Food Science, Food Technology, Environmental Health, or a related field (preferred).
 - Familiarity with food safety monitoring systems, temperature control, sanitation practices, and inspection techniques.
 
- Good communication and interpersonal skills to interact effectively with cross-functional teams and staff.
 - Ability to conduct training sessions and raise food safety awareness among employees.
 - Strong observation, analytical, and reporting skills.
 - Flexible, detail-oriented, and able to work in a fast-paced hospitality environment.
 - Certification in HACCP / PIC (Person in Charge) / Food Safety from Dubai Municipality (preferred or must be willing to obtain).
