Airmines Catering Company based ion Dubai, UAE is looking for a Food Safety Specialist with the following:

Job Responsibilities

  • Conduct routine spot checks, hygiene inspections, and risk-based assessments across production areas, storage facilities, and service zones to ensure compliance with HACCP, FSSC 22000, and airline-specific standards.
  • Prepare detailed shift and inspection reports, highlighting non-conformances, trends, and corrective actions taken to maintain food safety integrity.
  • Monitor critical control points (CCPs), operational prerequisite programs (OPRPs), and prerequisite programs (PRPs) as defined in the hazard control plan, ensuring timely verification and accurate documentation.
  • Assist in preparing for external audits (airline, commercial clients, and regulatory authorities) by maintaining records, addressing non-conformities, and implementing preventive measures.
  • Conduct on-site audits of local food suppliers and system-based audits of overseas suppliers to verify compliance with Emirates Flight Catering (EKFC) food safety standards.
  • Assess the suitability of new suppliers by reviewing production processes, hygiene standards, and product safety certifications.
  • Investigate supplier-related food safety issues, recommend corrective actions, and follow up on implementation to close out non-conformances.

Laboratory & Microbiological Testing

  • Perform microbiological sampling and testing of raw materials, finished products, and the production environment to identify potential hazards and ensure compliance with ISO 17025 laboratory standards.
  • Collaborate with the in-house laboratory team to interpret results, address deviations, and maintain accurate testing records.
  • Support environmental monitoring programs to prevent contamination and improve food safety practices across facilities.

Incident Management & Investigations

  • Lead investigations into critical food safety incidents, such as customer complaints, product recalls, or contamination events, ensuring timely resolution and effective root cause analysis.
  • Document findings and share corrective and preventive action plans (CAPA) with relevant departments and stakeholders.
  • Liaise with regulatory authorities and airline representatives to provide required reports and maintain transparency during investigations.


Training, Guidance & Leadership

  • Provide leadership and technical guidance to Food Safety Supervisors, Senior Food Safety Assistants, and Food Safety Assistants to ensure consistent implementation of policies and procedures.
  • Support continuous food safety training for production teams, enhancing awareness of good hygiene practices (GHP) and food handling protocols.
  • Participate in HACCP plan reviews during new product development, menu changes, or process modifications to identify potential hazards and mitigate risks.

Continuous Improvement & Reporting

  • Collaborate with the Food Safety Manager to identify gaps in current processes and recommend improvements to enhance overall food safety performance.
  • Prepare and present trend analysis reports based on audit results, customer complaints, microbiological data, and inspection findings to management and operational teams.
  • Promote a culture of food safety awareness across all departments, ensuring alignment with EKFC policies and international best practices.

Job Qualifications

  • Bachelor’s degree in Food Technology, Microbiology, or a related field (mandatory).
  • Level 4 Food Safety Certification or equivalent advanced training in HACCP and food safety management (preferred).
  • Minimum 5 years of experience in a food safety role within catering, airline catering, large-scale food manufacturing, or a related industry.
  • Proven track record of implementing and maintaining food safety management systems and working in compliance-driven environments.
  • Strong knowledge of HACCP, ISO 17025, FSSC 22000, and GHP/GMP requirements, food Industry Softwares.
  • Excellent written and verbal communication skills in English, with the ability to draft clear reports and deliver training.
  • Skilled in audit planning, investigation techniques, and CAPA implementation.
  • Confident, self-motivated, and able to work independently as well as lead and mentor cross-functional teams.
  • Analytical thinker with strong problem-solving skills and attention to detail in identifying and resolving food safety concerns.
