Job Responsibilities

  • Conduct spot verifications and internal inspections on the shop floor to ensure compliance with approved food safety procedures and hygiene standards.
  • Prepare and communicate shift-wise food safety inspection reports, highlighting non-conformances, corrective actions, and follow-ups.
  • Ensure Critical Control Points (CCPs), Operational Prerequisite Programs (OPRPs), and Prerequisite Programs (PRPs) are effectively monitored and verified as per the Hazard Control Plan.
  • Supervise and guide the food safety team to ensure accurate implementation of food safety controls across all operational areas.

Performance Monitoring & Trend Analysis

  • Monitor the food safety performance of internal and external stakeholders through analysis of internal audits, customer complaints, and verification results.
  • Prepare and present trend analysis reports on food safety performance for assigned business units and communicate findings to key stakeholders for corrective and preventive actions.

Supplier Audits & Approval Program

  • Conduct on-site food safety audits of local food suppliers as per the approved audit schedule and risk-based frequency.
  • Perform remote (e-audit) assessments for overseas food suppliers, including documentation review and system compliance evaluation.
  • Support the supplier approval and re-approval program, ensuring alignment with airline catering and international food safety standards.
  • Investigate and resolve physical, chemical, and microbiological food safety issues related to supplier products.

Complaint Handling & Investigations

  • Lead or support investigations into critical food safety-related customer complaints, including root cause analysis and corrective action implementation.
  • Coordinate with internal teams and suppliers to close complaints within defined timelines while maintaining regulatory and customer compliance.

Laboratory & Microbiological Testing

  • Perform microbiological analysis as per assigned duties and approved testing plans.
  • Ensure laboratory operations comply with ISO 17025 requirements, including documentation, calibration, method validation, and record maintenance.
  • Review microbiological results and support corrective actions for deviations or trends.

HACCP & System Management

  • Participate in HACCP reviews during:
    • New product development
    • Process changes or introduction of new equipment
    • New operational processes
    • Scheduled HACCP review cycles
  • Support the maintenance and continual improvement of the Food Safety Management System (FSMS) in line with FSSC 22000, airline standards, and regulatory requirements.

Audits & Stakeholder Support

  • Assist during food safety audits conducted by airline customers, commercial clients, and regulatory authorities.
  • Ensure audit readiness, document availability, and effective closure of audit findings.
  • Support the Food Safety Manager / Senior Food Safety Manager in daily operational requirements, compliance activities, and continuous improvement initiatives.

Team Supervision & Guidance

  • Supervise and mentor Food Safety Supervisors, Senior Food Safety Assistants, and Food Safety Assistants.
  • Provide technical guidance on food safety standards, hygiene practices, audits, and investigations.

Job Qualifications

  • Bachelor’s Degree in Microbiology, Food Technology, Food Science, or an equivalent discipline.
  • Level 4 Food Safety Training or equivalent internationally recognized certification.
  • Minimum 5 years of experience in a Food Safety–related role.
  • Proven experience in airline catering, large-scale catering operations, food manufacturing, or related food industry sectors.
  • Strong exposure to HACCP, FSSC 22000, ISO standards, supplier audits, and food safety investigations.
  • Strong knowledge of HACCP, CCPs, OPRPs, PRPs, FSSC 22000, and ISO 17025.
  • Experience in supplier audits, complaint investigations, and food safety trend analysis.
  • Excellent analytical, reporting, and problem-solving skills.
