Dietetic Specialist wanted at a leading Catering company in Dubai, UAE with the following:
Job Responsibilities
- Develop, review, and optimize nutritionally balanced menus in line with airline standards, aviation catering guidelines, and global dietary regulations.
- Ensure all meals meet diverse nutritional requirements, including medical diets, cultural considerations, and wellness-focused menu options.
- Use evidence-based nutrition practices to support healthy meal planning.
- Maintain and update SOPs for special meals such as diabetic, gluten-free, vegan, low-sodium, and religious meal categories.
- Ensure consistent preparation, portioning, and labeling to comply with dietary guidelines and customer specifications.
- Lead allergen management across all meal categories, ensuring accurate allergen declarations and maintaining a centralized allergen database.
- Conduct internal audits, update allergen lists, and work with QA/QC teams to prevent cross-contamination.
- Ensure compliance with UAE food regulations, international aviation food safety standards, and airline requirements.
- Perform detailed nutritional analysis using approved tools and prepare compliant nutritional labelling for menus, products, and packaging.
- Verify accuracy of energy values, macro/micronutrients, and dietary claims in line with regulatory expectations.
- Collaborate with culinary teams, Quality Assurance, procurement, and airline clients to ensure consistent delivery of dietetic and nutrition services.

- Provide technical input during new product development and menu presentations.
- Customize meal plans for medical diets (renal, diabetic, allergen-free), cultural diets, and religious requirements.
- Approve special meal requests and ensure they meet nutritional and safety guidelines.
- Investigate deviations from approved dietary standards and implement corrective actions.
- Maintain strong documentation to support internal and external audits.
- Ensure continuous improvement in dietetic compliance and food safety workflows.
- Deliver allergen training, nutrition awareness programs, and food safety workshops for culinary and production teams.
- Promote company-wide wellness initiatives and support EKFC’s strategy to enhance employee and customer well-being.
- Develop nutrition education materials, presentations, and SOPs.
Job Qualiifcations
- Bachelor’s Degree in Dietetics, Nutrition, Food Science, or a closely related field.
- Professional certification or licensure in dietetics (preferred).
- Knowledge of HACCP, ISO 22000, GHP, and aviation catering standards is an advantage.
- Minimum 6 years of experience in dietetics, nutrition, foodservice, or aviation catering.
- Strong background in allergen management, nutritional labelling, and regulatory compliance.
- Experience in large-scale or high-volume food production is highly desirable.
