A leading state-of-the-art confectionery manufacturing company in , Dubai is seeking a skilled and innovative Food Technologist to join its production and R&D team. This role is ideal for professionals with strong experience in bakery and confectionery manufacturing, product development, and food safety compliance within the UAE food industry.

The successful candidate will play a key role in developing high-quality cookies, wafers, chocolates, and confectionery products, while ensuring compliance with HACCP, ISO 22000, HALAL, and Kosher standards.

Responsibilities – Confectionery Food Technologist

  • Develop, formulate, and test new recipes for cookies, wafers, chocolates, fillings, and coated confectionery products.
  • Optimize ingredient formulations using sugars, cocoa derivatives, fats, emulsifiers, stabilizers, flavors, and leavening agents.
  • Improve product quality, shelf life, texture, taste, and cost efficiency.
  • Oversee baking, chocolate casting, enrobing, glazing, cooling, and packaging processes.

  • Prepare and implement Standard Operating Procedures (SOPs) and process control documents.
  • Ensure compliance with Dubai Municipality food safety regulations and international food safety standards.
  • Support allergen management programs, traceability systems, and microbiological risk assessments.
  • Collaborate with production, procurement, and quality assurance teams for continuous improvement.
  • Monitor raw material specifications and supplier quality compliance.
  • Assist in internal and external food safety audits.

Job Qualifications

  • Bachelor’s Degree or Diploma in Food Technology, Food Science, Food Engineering, or Microbiology.
  • Minimum 3 years of experience in bakery or confectionery manufacturing.
  • Strong knowledge of HACCP, ISO 22000, GMP, and food safety management systems.
  • Certifications in HACCP, HALAL, or Kosher are highly preferred.
  • Hands-on experience in confectionery processing equipment and production lines.
  • Understanding of allergen control, labeling regulations, and food traceability systems.
  • Knowledge of microbiological quality control and shelf-life studies.
  • Excellent documentation and technical reporting skills.
