Wanted a highly motivated and detail-oriented Catering Food Quality Controller to join a catering Industry in Dubai. The ideal candidate will be responsible for ensuring that all food products meet the highest standards of quality, hygiene, and safety in compliance with Dubai Municipality food safety regulations and international standards such as HACCP and ISO 22000.
Job Responsibilities
- Monitor Food Quality Standards
Continuously monitor all food items during receiving, storage, preparation, cooking, holding, and serving stages to ensure they meet established quality and safety standards.
Verify that taste, texture, color, aroma, and presentation of finished products align with customer expectations and internal benchmarks.
- Conduct Daily Inspections:
- Perform regular hygiene and sanitation inspections of all kitchen areas, food storage units (dry, chilled, frozen), and dishwashing sections.
- Check cleanliness of food contact surfaces, equipment, and utensils according to SOPs and HACCP protocols.
- Ensure Food Safety Compliance:
- Ensure all processes strictly adhere to Dubai Municipality Food Code, HACCP, GMP, and ISO 22000 standards.
- Monitor and record critical control points (CCPs) like cooking temperatures, chilling times, and delivery temperatures to avoid foodborne hazards.
- Verify Incoming Deliveries:
- Inspect raw materials, packaging, and supplies upon receipt to confirm they are within specification, properly labeled, and transported under safe conditions.
- Reject and report any damaged, expired, or poor-quality goods to the procurement team.
- Identify and Report Quality Issues:
- Proactively identify deviations in quality, such as undercooked products, cross-contamination, or poor storage practices.
- Document and report findings to the Quality Supervisor or Catering Manager, and assist in determining corrective actions.
- Collaborate with Kitchen & Operations Teams:
- Work closely with chefs, kitchen supervisors, and service teams to implement food safety and quality improvements.
- Provide feedback on recipe consistency, preparation practices, and plating standards.
- Maintain Detailed Records:
- Maintain logs of temperature checks, cleaning schedules, pest control activities, and food sampling results.
- Prepare and file inspection reports, non-conformance reports, and incident logs for management review.
- Internal Audits & Corrective Actions:
- Participate in internal quality audits and assist in closing non-conformities by recommending and implementing corrective and preventive actions (CAPA).
- Track quality trends and raise red flags on recurring issues for process optimization.
- Staff Hygiene Monitoring:
- Ensure all food handlers follow personal hygiene protocols such as clean uniforms, proper handwashing, and use of gloves/hairnets.
- Monitor grooming standards, especially during production and service hours.

- Training and Awareness:
- Support the training of kitchen and service staff on basic food safety, allergen control, and personal hygiene.
- Reinforce best practices through toolbox talks, refresher sessions, and on-the-job coaching.
- Support During External Audits:
- Assist during inspections by Dubai Municipality, clients, or third-party auditors by providing required documentation and explaining current food safety systems in place.
Job Qualifications
- Bachelor’s degree or diploma in Food Science, Food Technology, Microbiology, or a related field.
- 1–3 years of experience in food quality control, preferably in a catering company, food service, or hospitality industry in Dubai.
- Solid understanding of Dubai Municipality food safety regulations, HACCP, GMP, and ISO 22000 standards.
- Strong analytical skills and excellent attention to detail.
- Good communication and teamwork skills to work efficiently in a fast-paced catering kitchen environment.
- Proficiency in using MS Office for documentation and report generation.
- Flexible to work shifts, weekends, and public holidays if required.
