seeking a proactive and detail-oriented R&D Executive (Bakery) to join in Bengaluru /Bangalore-State of Karnataka, India .The ideal candidate should have a solid foundation in bakery science and product formulation and a creative mindset to develop innovative and high-quality baked products that align with market needs and customer preferences.
Job Responsibilities
- New Product Development (NPD):
Initiate and manage the development of new bakery products including breads, cakes, cookies, muffins, pastries, and other baked goods from concept through commercialization. - Recipe Formulation & Optimization:
Develop and refine product formulations to achieve desired texture, flavor, shelf life, and cost-effectiveness while complying with regulatory and safety standards. - Raw Material Evaluation:
Test and evaluate new ingredients and raw materials for functionality, quality, and performance in bakery applications. Coordinate with suppliers to source innovative ingredients.

- Pilot Trials & Scale-Up:
Conduct lab-scale and pilot-scale trials to validate product recipes, followed by successful scale-up in production while maintaining consistency and quality. - Process Improvement:
Identify opportunities for process optimization to enhance product quality, reduce waste, and improve production efficiency. - Sensory Analysis & Documentation:
Conduct sensory evaluations, shelf-life studies, and maintain detailed documentation of product specifications, formulations, trial outcomes, and testing protocols. - Cross-functional Collaboration:
Work closely with Production, Quality Control, Procurement, and Marketing teams to ensure feasibility, compliance, and market readiness of new products. - Trend Monitoring & Innovation:
Stay informed on current trends in the bakery industry, consumer preferences, health claims, and nutritional trends to inspire innovative product ideas.
Job Qualiifcations
- Educational Qualification:
Bachelor’s degree or diploma in Food Technology, Bakery Science, Food Processing, or related field. - Industry Experience:
Minimum of 1 to 3 years of hands-on experience in R&D roles within the bakery or baked goods sector.
- Technical Skills:
- Strong knowledge of bakery ingredients (e.g., flours, leavening agents, emulsifiers, enzymes, fats, etc.) and their functionalities.
- Experience in using and maintaining lab and bakery equipment for product development.
- Familiarity with HACCP, GMP, and food safety protocols in a manufacturing setup.
- Soft Skills:
- Excellent problem-solving and analytical thinking abilities.
- Strong attention to detail and record-keeping.
- Effective communication and teamwork skills.
- Ability to manage multiple projects and meet deadlines.
