Hiring an experienced Quality Controller for a leading biscuit manufacturing factory in Calicut , Kerala. The ideal candidate must have hands-on experience in biscuit production quality control, food safety compliance, and quality assurance processes within a large-scale food manufacturing environment.

The Quality Controller will be responsible for ensuring product quality, food safety standards, raw material inspection, process monitoring, and final product approval in compliance with FSSAI, HACCP, GMP, and ISO standards.
Job Responsibilities
- Inspect incoming raw materials such as flour, sugar, fats, emulsifiers, leavening agents, and additives.
- Verify packaging materials for compliance with food safety and quality standards.
- Conduct sampling and testing as per quality control procedures.
- Ensure vendor compliance with approved specifications.
- Monitor critical control points (CCPs) during mixing, dough preparation, sheeting, cutting, baking, cooling, and packaging.
- Check baking parameters such as temperature, moisture content, weight control, texture, and color consistency.
- Ensure product specifications like size, thickness, and uniformity are maintained.
- Record production data and report deviations immediately.
Finished Product Quality Assurance
- Perform physical, chemical, and sensory evaluation of biscuits.
- Ensure finished products meet internal quality standards and regulatory requirements.
- Approve or reject products based on quality checks.
- Maintain retention samples and documentation records.
4. Food Safety & Compliance
- Ensure compliance with FSSAI, HACCP, GMP, and ISO 22000 standards.
- Maintain hygiene and sanitation standards across the production floor.
- Conduct routine internal audits and inspections.
- Support external audits and regulatory inspections.
Documentation & Reporting
- Maintain QC records, test reports, batch records, and inspection logs.
- Prepare daily quality reports and highlight non-conformities.
- Assist in corrective and preventive action (CAPA) implementation.
- Ensure traceability and product recall readiness.
- Coordinate with production, maintenance, and warehouse teams.
- Train production staff on quality standards and hygiene practices.
- Support continuous improvement initiatives to reduce product defects and wastage.
Job Qualifications
- Bachelor’s Degree / Diploma in Food Technology, Food Science, Microbiology, or Chemistry.
- Minimum 3 years of experience in biscuit or bakery manufacturing quality control.
- Strong knowledge of food safety standards and quality management systems.
- Experience in handling laboratory equipment and quality testing procedures.
- Good understanding of bakery production processes.
- Strong documentation and reporting skills.
- Ability to work in shifts and production-based environments.
Preferred Skills
- Knowledge of moisture analysis, texture analysis, and shelf-life studies.
- Familiarity with root cause analysis and corrective action procedures.
- Strong analytical and problem-solving skills.
- Good communication and team coordination abilities.
