Hygiene Officer for a catering and hospitality operation in Dubai, UAE Hygiene Officer is responsible for maintaining the highest standards of food hygiene, food safety, and sanitation compliance. This role plays a key part in ensuring adherence to UAE Food Safety Regulations, Dubai Municipality guidelines, HACCP food safety systems, and ISO 22000 standards within catering, central kitchen, and food production environments.

The ideal candidate will have hands-on experience in UAE catering jobs, strong audit skills, and the ability to enforce hygiene controls in high-volume food service and hospitality operations.

Job Responsibilities

Food Safety & Hygiene Management

  • Conduct daily hygiene inspections across kitchens, production units, cold rooms, dry stores, and food dispatch areas.
  • Ensure compliance with HACCP guidelines, ISO 22000 Food Safety Management System, and UAE food safety laws in Dubai, Sharjah, and Abu Dhabi.
  • Monitor food handling, food storage, food preparation, and food transportation practices to prevent contamination and foodborne illnesses.

Corrective Actions & Risk Control

  • Identify food safety hazards and hygiene non-conformities during inspections and audits.
  • Lead and document Corrective and Preventive Actions (CAPA) in line with food safety risk assessment requirements.
  • Investigate food safety incidents, hygiene violations, customer complaints, and contamination risks with proper root-cause analysis.

Audits & Regulatory Compliance

  • Perform supplier hygiene audits, vendor food safety inspections, and compliance assessments (minimum two audits per month).
  • Support internal food safety audits and external audits by Dubai Municipality, Sharjah Municipality, ADAFSA, and certification bodies.
  • Assist in maintaining ISO 22000 certification, HACCP documentation, and audit readiness at all times.

Food Safety Documentation & Records

  • Maintain accurate food safety records and hygiene documentation, including:
    • Temperature monitoring and cold chain logs
    • Cleaning and sanitation schedules
    • Pest control monitoring reports
    • Hygiene inspection checklists
    • Staff medical fitness and personal hygiene records

Training & Food Handler Hygiene

  • Conduct food safety training, hygiene awareness sessions, and sanitation training for food handlers and catering staff.
  • Monitor personal hygiene standards, uniform compliance, hand-washing practices, and food handler medical fitness certificates.
  • Promote a strong food safety culture across catering and hospitality operations.
  • Collaborate with operations, quality assurance, production, and catering teams to continuously improve hygiene and food safety performance.
  • Provide expert guidance to ensure compliance with UAE catering hygiene standards and company food safety policies.

Job Qualifications

  • HACCP Level 3 or HACCP Level 4 Certification (mandatory).
  • Minimum 1 year UAE experience in catering, central kitchen, food service, or food manufacturing.
  • Strong knowledge of Dubai Municipality food safety regulations, Sharjah Municipality guidelines, ADAFSA, and UAE food laws.
  • Practical understanding of HACCP implementation, ISO 22000, and food safety audit procedures.
  • Excellent food safety documentation, reporting, and audit skills.
  • Strong communication skills with the ability to train food handlers.
  • Ability to work under pressure in high-volume catering and hospitality environments.
  • Detail-oriented with a proactive approach to food hygiene and quality assurance.
