
Hygiene Officer wanted in Dubai, UAE for leading luxury and hospitality Company’s Hotel Collection Dubai with the following:
Job Responsibilities
Conduct routine hygiene inspections of all Hotel Collection Dubai restaurant food preparation areas, kitchens, food storage rooms, cold rooms, freezers, and service outlets to ensure cleanliness and compliance.Ensure strict adherence to HACCP, ISO 22000, and local food safety regulations applicable to hotel and hospitality operations in Dubai.
Monitor, record, and verify temperature control logs for chillers, freezers, hot holding units, and food display equipment.Supervise and enforce personal hygiene practices among kitchen, stewarding, and food service staff, including handwashing, grooming, and uniform standards.Inspect kitchen equipment, utensils, work surfaces, and food contact materials to ensure proper cleaning, sanitization, and maintenance.Review pest control service reports, investigate pest sightings, and coordinate corrective actions with approved pest control providers.
Oversee daily, weekly, and monthly cleaning and sanitation schedules, ensuring all tasks are completed according to approved SOPs in the IHG based Hotel.Ensure cleaning chemicals are correctly used, safely stored, and clearly labeled in compliance with chemical safety guidelines.Maintain, update, and audit hygiene checklists, sanitation logs, temperature records, and corrective action reports.
Conduct spot checks during food handling, preparation, and service periods to identify hygiene risks and non-conformities.Coordinate closely with the stewarding department to ensure dishwashing, waste disposal, and kitchen sanitation standards are consistently met.Deliver hygiene training, food safety inductions, and refresher sessions for kitchen, F&B, and stewarding staff.Identify, document, and report hygiene hazards or non-compliance issues to the Culinary Director, Executive Chef, or Department Heads, and follow up on corrective actions.
Assist in internal and external food safety audits, preparing documentation for inspections by Dubai Municipality and other regulatory authorities.Verify proper waste management procedures, including food waste, used cooking oil, and general waste disposal.Monitor correct use of personal protective equipment (PPE) such as gloves, hairnets, masks, and protective clothing.Review, update, and maintain hygiene-related policies, procedures, and Standard Operating Procedures (SOPs) in line with regulatory updates.
Job Qualifications
- Bachelor’s degree or Diploma in Food Science, Food Technology, Hotel Management, Hospitality Management, Microbiology, or a related field.
- 2–5 years of proven experience as a Hygiene Officer, Food Safety Officer, or similar role within hotels, resorts, catering, or large-scale food service operations in the UAE or GCC.
- Strong working knowledge of HACCP principles, ISO 22000 / ISO 9001, and Dubai Municipality Food Safety Regulations.
- Mandatory HACCP certification; additional certifications such as ISO Internal Auditor, Food Safety Level 3/4, or PIC (Person in Charge) will be an added advantage.
- Hands-on experience in food safety audits, hygiene inspections, and regulatory authority inspections.
- In-depth understanding of kitchen sanitation, pest control management, waste management, and chemical handling procedures.
