Culinary Management Institute in Dubai, UAE, is looking for a Food Technologist for research, development, optimisation, and validation of rapid-rehydration foods, survival rations, and convenience meal solutions of Instant Foods.

Responsibilities – Food Technologist

1. Product Research & Development – Culinary Management

  • Develop quick-cooking and instant dehydrated food products with minimal preparation requirements
  • Formulate complete instant meal systems suitable for field and emergency use
  • Design and optimize non-vegetarian dehydrated products including meat, poultry, and protein-rich formulations for Product Research .
  • Develop instant beverage mixes, nutritional supplements, and dessert powders for Product Research
  • Innovate emergency and survival ration formulations with high caloric density and nutritional balance
  • Customize formulations for defence operations, disaster relief, and high-stress environments

2. Processing Technologies

  • Apply and optimize advanced dehydration and preservation technologies, including:
    • HTST pneumatic drying
    • Freeze drying and accelerated freeze-dehydration
    • Cold-shock dehydration
    • Intermediate Moisture Food (IMF) processing
  • Ensure rapid rehydration, minimal texture degradation, and retention of nutritional and sensory quality
  • Study drying kinetics, rehydration behavior, and water activity control
  • Scale formulations from Food laboratory to pilot plant and full-scale production

3. packaging solutions

  • Conduct comprehensive shelf-life studies for packaging solutions
    • Ambient conditions
    • High-altitude environments
    • Extreme hot and cold temperatures
  • Develop modular ration components for flexible meal planning and logistics
  • Select, test, and validate advanced packaging solutions for protection against:
    • Moisture
    • Oxygen
    • Light
  • Ensure compliance with packaging solutions for defence food safety standards, storage specifications, and quality protocols

4. Field Trials & End-User Validation

  • Coordinate field trials with:
    • Armed forces
    • Disaster-relief and emergency response agencies
  • Evaluate product performance under real operational constraints, including:
    • Limited water availability
    • Restricted fuel and cooking time
    • Harsh environmental conditions
  • Collect and analyze user feedback to improve:
    • Taste and palatability
    • Convenience and preparation ease
    • Portioning and usability in field operations

5. document management system

  • Prepare detailed technical reports, SOPs, validation documents, and process manuals for document management system,
  • Support technology transfer to:
  • Contribute to scientific publications, patents, and internal R&D knowledge systems
  • Collaborate with multidisciplinary teams across R&D, quality, operations, and field deployment

Job Qualifications

  • M.Tech or PhD in:
    • Food Technology
    • Food Engineering
    • Food Science
    • Related disciplines
  • B.Tech in Food Technology with significant and relevant industry or defence-oriented experience may be considered
  • Strong expertise in dehydration technologies, drying kinetics, and instantization techniques
  • Hands-on experience with Ready-to-Eat (RTE), instant foods or space foods
  • Knowledge of nutritional formulation for extreme and high-stress environments
  • Proficiency in sensory evaluation, shelf-life testing, and food quality assurance
  • Understanding of food safety standards, packaging science, and storage stability
  • Ability to work in a multidisciplinary R&D and field-oriented environment in Culinary Management.
  • Strong documentation, analytical, and problem-solving skills
