Food Quality Controller wanted at a leading Restaurant chain in Calicut, Kerala, India, with the following:

Job Responsibilities
- Monitor Daily Food Production:
Ensure all food items prepared in the kitchen meet established quality, taste, presentation, and freshness standards. - Conduct Quality Inspections:
Perform routine checks on raw materials, semi-prepared items, and finished dishes to ensure compliance with food safety and quality guidelines. - Hygiene & Safety Compliance:
Enforce strict hygiene practices across kitchen staff, equipment, and storage areas in alignment with FSSAI and internal restaurant standards.
- Temperature & Storage Control:
Verify proper storage practices, including temperature monitoring, labelling, and FIFO/FEFO implementation for all ingredients. - Documentation & Reporting:
Maintain accurate records of quality checks, non-conformance reports, corrective actions, and daily quality logs. - Food Handling Supervision:
Oversee proper food handling, preparation, cooking, and serving practices to ensure safe and high-quality food delivery. - Coordinate with Kitchen Team:
Work closely with chefs and kitchen staff to address quality issues, implement improvements, and ensure consistent product standards. - Customer Complaint Analysis:
Support in investigating quality-related customer complaints and implementing corrective and preventive measures. - Ensure Process Compliance:
Verify adherence to SOPs, portion control standards, and recipe specifications across all production activities.
Job Qualification
- Educational Background:
Bachelor’s degree in Food Technology, Food Science, Food Processing, or a related field. - Experience:
Minimum 1 year of experience as a Food Quality Controller, preferably in a restaurant, catering, or food service environment. - Technical Knowledge:
Understanding of food hygiene, food safety standards, GMP, GHP, and basic microbiological/chemical food quality parameters. - Attention to Detail:
Strong observation skills with the ability to detect inconsistencies in taste, texture, aroma, and overall product quality. - Communication & Coordination:
Ability to work collaboratively with kitchen staff and management to maintain consistency and resolve quality issues. - Recordkeeping Skills:
Ability to maintain accurate logs, checklists, and documentation as per company requirements. - Problem-Solving Ability:
Capable of identifying quality deviations and implementing corrective actions promptly.
