Supermarket chain Dubai UAE is looking, for a Quality Assurance Officer with Food Science, Food Technology background and Food Quality Assurance experience:

Job Responsibilities

  • Production Monitoring
  • Ensure Real-Time Food Safety & Quality:
    Oversee all production activities within the central kitchen or food manufacturing units to ensure real-time adherence to food safety and quality standards.
  • Floor-Level Process Surveillance:
    Conduct continuous monitoring of on-floor production processes to ensure strict compliance with approved Standard Operating Procedures (SOPs).
  • Critical Control Point (CCP) Checks:
    Perform online (real-time) inspections at critical control points to verify proper control of food safety hazards.
  • Implementation of GMP & GHP:
    Monitor and ensure consistent execution of Good Manufacturing Practices (GMP) and Good Hygiene Practices (GHP) across all production areas.
  • Cleaning & Sanitation Oversight:
    Verify proper cleaning and sanitizing procedures of equipment, utensils, and facilities are being followed, with a focus on allergen control and cross-contamination prevention.
  • Random Quality Control (QC) Checks:
    Conduct daily random sampling and QC checks on in-process and finished products to assess compliance with quality parameters.
  • Deviation Detection & Corrective Actions:
    Identify any non-conformities or process deviations during production and coordinate immediate corrective and preventive actions (CAPA).

2. Quality Control

  • Raw Material and Packaging Inspection:
    Inspect the quality of incoming raw materials and packaging components before acceptance to ensure they meet defined specifications and standards.
  • Pre-Production Quality Verification:
    Re-validate raw materials before use in production to prevent the use of substandard or expired inputs.
  • Finished Product Evaluation:
    Inspect finished goods for compliance with internal and regulatory standards, including weight, temperature, organoleptic properties, packaging integrity, and correct labeling.
  • Storage & Temperature Monitoring:
    Ensure cold chain integrity and appropriate ambient storage conditions are maintained to prevent spoilage, contamination, or quality degradation.
  • Dispatch & Outbound Monitoring:
    Supervise the dispatch process, ensuring that all outbound goods meet quality and safety specifications and are handled under hygienic and compliant conditions.

3. Documentation & Reporting

  • Customer Complaint Investigations:
    Collaborate with relevant departments to investigate customer complaints and conduct root cause analysis from a production and quality standpoint.
  • Real-Time Record Maintenance:
    Maintain comprehensive and accurate documentation of food safety checks, quality inspections, deviations, and corrective actions taken.
  • Traceability & Recordkeeping:
    Ensure traceability logs (from raw materials to finished products) are updated and readily available for audits or regulatory reviews.
  • Production Record Audits:
    Monitor that production teams are maintaining complete, accurate, and up-to-date quality and hygiene records.
  • Specification Management:
    Prepare and maintain detailed specification sheets for raw materials (RM) and finished products (FP); share with QA Head of Department for verification and approval.
  • Audit Readiness & Reporting:
    Assist in the preparation of quality assurance reports, summaries, and data required for internal reviews and external audits.
  • Food-Grade Equipment Documentation:
    Verify and document food-grade certifications/specifications for all equipment, packaging materials, and contact surfaces.
  • Maintenance Coordination:
    Liaise with the Maintenance Department to ensure timely preventive maintenance and repair of equipment to avoid contamination risks.

4. Food Safety Compliance

  • Standards Implementation:
    Enforce and verify compliance with food safety management systems including HACCP, ISO 22000, and other applicable standards.
  • Deviation Management & RCA:
    Support in the investigation and root cause analysis of food safety and quality incidents or complaints.
  • Audit Coordination:
    Coordinate with food safety teams to facilitate successful internal and third-party audits.
  • Chemical Inventory Monitoring:
    Supervise and control the inventory of food-grade cleaning agents and chemicals, ensuring proper usage and documentation.
  • External Laboratory Testing:
    Ensure external laboratory tests (microbiological, chemical, etc.) for the Central Food Inspection (CFI) division are conducted as per the sampling plan and results are documented and available for review.
  • Occupational Health Compliance:
    Ensure that all employees handling food hold valid occupational health cards as per local regulations.
  • Trend Monitoring & Analysis:
    Monitor and analyze trends in microbiological tests, environmental swabbing, foreign material checks, and pest control to identify recurring issues and propose preventive actions.

5. Training & Staff Support

  • Staff Training & Awareness:
    Assist in training production and support staff on hygiene protocols, food safety standards, SOPs, and GMP/GHP requirements.
  • On-the-Job Coaching:
    Provide immediate corrective guidance and coaching to staff when unsafe or non-compliant practices are observed.
  • Staff Knowledge Verification:
    Periodically assess the awareness and implementation of food safety protocols by production staff through observations and verbal/written checks.

Job Qualifications

  • Bachelor’s or Master’s Degree in Food Science or related discipline.
  • Preferred/Optional Certifications:
    • Dubai Municipality Certified Food Safety Trainer (All Levels).
    • Level 4 Award in Food Safety (Advanced Food Hygiene).
    • Level 3 Award in HACCP for Manufacturing/Catering.
    • Level 3 Person In Charge (PIC) Certification.
    • ISO 22000 Internal Auditor Certification.
    • HACCP Awareness Certification.
    • 1–2 years of hands-on experience in Food Safety, Quality Assurance, or Health & Safety roles within the food manufacturing, retail, or food service industry.
